This easy Black Bean & Salsa Chicken Casserole one pan recipe is the perfect dish to add to your meal plan.
Preheat oven to 375 degrees.
Drain and rinse S&W Black Beans.
Add corn, salsa, black beans and rice to a large casserole dish. Using a spoon, mix together all of the ingredients.
Carefully pour in chicken broth and stir in chili powder and oregano until everything is evenly combined.
Place chicken breast pieces into the mixture in the casserole dish.
Cover dish with foil and bake for 1 hour at 375 degrees.
Once baked, remove dish from oven and sprinkle cheddar cheese and onions over the casserole. The cheese will melt perfectly if sprinkled on the dish immediately.
Serve hot and top with sour cream if desired. Enjoy!
