What does summer mean to you? If your family is anything like ours, it means venturing outside for as much of the day as we possibly can. I personally love this time of the year because we change up our work day routine a bit. Instead of coming home and eating dinner right away, we let the kids play in the backyard while we prepare dinner. And by prepare I mean grill! We love to grill because it is easy, yummy and super convenient while we play outside! Last summer I tried something different for a dinner and it was amazing and super easy for those busy work night dinners!
Black Bean and Tomato Salsa Topped Grilled Avocados

Yes, you read that right! Grilled avocados topped with a delicious black bean and tomato salsa! Colorful veggies, a little spice and fun on the grill! Dinnertime can be stressful after a long day at work so I am always looking for short cuts and tricks to making dinner prep easier. Just like using the grill to cut time and bring convenience I have found that the cans of Hunt’s Tomatoes make my dinner creations a lot easier!
Ingredients:
Ripe but not too ripe Avocados, sliced in half
15 oz can black beans, drained
15 oz can whole corn, drained
15 oz can Hunt’s Diced Tomatoes
1/2 red onion, chopped
1 jalapeno, remove seeds – mince
1/4 cup cilantro, chopped
1 lime
1 tsp cumin
1/2 TBSP garlic powder
salt and pepper to taste
Directions:
1. Over a warm grill, place avocado halves “meat” side down. Grill avocados for 5-7 minutes.
2. Prepare all veggies, chopping and cleaning.
3. In a large mixing bowl combine all ingredients except lime. Mix well!
4. Cut lime in half and squeeze lime juice over veggies.
5. Stir in the lime juice and create a nice colorful salsa.
6. Place about 1/4 cup of salsa mixture onto each grilled avocado half.
7. Enjoy Black Bean and Tomato Salsa on the avocados but also serve remaining salsa with tortilla chips.
We enjoy these little avocado boats for side dishes or as whole meals! My kids adore avocados, tomatoes and beans so they are thrilled when we decide to make these and I happy too! Talk about a great way to sneak in a ton of veggies, healthy fats and fiber! Plus, when I make this recipe for parties or BBQ’s I look pretty fancy!! My little secret though – so not fancy but totally easy!
And now I am hungry. Not only is the grilled avocado a treat for your mouth but the Black Bean and Tomato Salsa is one of our favorites to enjoy with chips or on tacos too. A must try for any upcoming summer party for sure.
