Instant Pot Peach Cobbler
Ingredients:
1/4 cup brown sugar
1/4 tsp cinnamon
2 tsp lemon juice
3 TBSP cornstarch
3/4 cup water
2 1/3 cups baking mix
1/2 cup milk
3 TBSP butter, melted
1 tsp vanilla
5 TBSP sugar
1/2 tsp cinnamon
Directions:

Instant Pot Peach Cobbler
Instant Pot Peach Cobbler is the perfect summer dessert recipe. This recipe is a family favorite now and it is perfect for large gatherings.
Ingredients
- 10 Fresh peaches, peeled and pit free
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 2 tsp lemon juice
- 3 TBSP cornstarch
- 3/4 cup water
- 2 1/3 cup baking mix
- 1/2 cup milk
- 3 TBSP butter melted
- 1 tsp vanilla
- 5 TBSP sugar
- 1/2 tsp cinnamon
Instructions

Prepare peaches by slicing them into wedges.

In a large mixing bowl combine sliced peaches, sugar, brown sugar, cinnamon, lemon juice, cornstarch and water until completely mixed together.

Once combined, pour into pressure cooker.

In a medium mixing bowl combine baking mix, milk, butter, vanilla and 3 TBSP of the 5 TBSP needed. Mix into a nice thick baking mix.

Place heaping scoops of the topping on the surface of the peaches until mix is gone.

Combine remaining sugar and cinnamon in small bowl and toss to create a cinnamon and sugar mixture.

Sprinkle cinnamon and sugar mixture over the peaches and topping.

Secure the lid of the pressure cooker and close the pressure valve.

Cook on high for 15-17 minutes and let the pressure drop naturally.

Serve warm on its own or with a scoop of ice cream. ENJOY!

This looks great! What baking mix did you use? I wonder if I can use a gluten-free baking mix. I will have to try it!!
