Cheesy Baked Zucchini Veggie Spirals Casserole

Parenting is full of all kinds of responsibilities most of them are fun, some of them are difficult.  One of my biggest issues with my kids is finding that perfect meal that is healthy and kid approved.  I know, everyone says they have picky eaters but I swear, we have the pickiest!  Meal time is usually a battle time, especially if I put veggies on Jude plate.  Honestly, it is exhausting!
That is until we found the new Green Giant Veggie Spirals™.  I have found that if I make our favorite family pasta recipes but instead of pasta I use these Veggie Spirals the kids eat them up with no complaints and boom veggie intake for the day is done!  This is probably one of our favorite and easiest dinnertime recipes we use the Veggie Spirals in.  Check this out, again, super easy and a healthier version of a pasta dish.

Cheesy Baked Zucchini Veggie Spirals Casserole

Ingredients:
1 bag of Green Giant Zucchini Veggie Spirals – prepared
3 TBSP salt
1 TBSP olive oil
8 ounces Italian sausage
Medium onion, diced
3 TBSP minced garlic
14 ounce can – crushed tomatoes
4 TBSP basil
3/4 cup ricotta cheese
2 cups shredded Mozzarella cheese
1/2 cup shredded Parmesan cheese

Directions:

1.  Preheat oven to 350 degrees.
2.  Prepare Green Giant Zucchini Veggie Spirals as directed on package.  Once cooked, place veggies spirals in a cheese cloth or towel to remove some moisture.  Set aside.
3.  Add onion and garlic to a saute pan with olive oil and cook over medium heat for a few minutes.
4.  Add sausage to the pan with the onions and garlic. Break up the Italian sausage into small clumps.  Heat on medium heat and cook until lightly browned.
5.  Carefully add the can of crushed tomatoes to the pan and sprinkle in the basil.  Let pan come to a simmer and then lower the temperature and cook for 5 minutes.

6.  Squeeze moisture out of the Veggie Spirals and then add spirals to the pot with the tomatoes and sausage.  Gently stir to combine all ingredients and make sure Veggie Spirals are coated with sauce.
7.  Transfer contents of the pan into an oiled 8×8 baking dish.
8.  Top casserole with clumps of the ricotta cheese, spread ricotta on top of the casserole.
9.  Sprinkle the Mozzarella and Parmesan cheese over the casserole evenly.
10.  Bake casserole at 350 degrees, uncovered for 25 minutes.
11.  Once baked, cut into squares and serve HOT.  Enjoy!

Delicious!  Like I said, parenting is full of responsibilities and the food battle is one of those things.  Finding ways to get around those battles is what parents need, especially during those crazy weeks when heading through the drive through seems so much easier.

    This is pure perfection! I have to make veggie spirals by hand and it's very time consuming. This makes healthier meals so much easier.

    Oh my gosh. I didn't know that Green Giant had all of these spirals available. I'm adding them to the grocery list. You said you're thinking of ways to use the sprialized beets and I have a suggestion. They would pair great with a salmon salad. Yum! I am going to fill the freezer with spirals, too. I like easy ways to cook better. Thanks for the great recipe.

    I would probably just enjoy them with some butter spray and minced garlic. I'm on Nutrisystem and veggie spirals are one of my faves. As much as I love veggie spirals but hate making them and cleaning my zoodle maker afterwards. I had no idea Green Giant has frozen spirals. Timesaver and it's Green Giant so I know it's fresh. Thanks for the recipe.

    I'm an adult and I find getting my daily veggies to be hard sometimes! haha. This recipe sounds really yummy and a great way to trick yourself into eating healthier. Looking forward to your ideas for the beet and carrot "noodles!"

    I have been eating a lot of zucchini lately because I always forgot how good it is and then when I find a delicious recipe like this one, I stock up and eat it all of the time!
