Cheeseburger Casserole – Weight Watchers Friendly

This Weight Watchers Friendly Cheeseburger Casserole recipe has been a go to for me while on Weight Watchers for years.  It is not only a super easy dinner recipe but a recipe that keeps me on track while also feeding my picky kiddos dinner!  Cheeseburger Casserole is a yummy cheeseburger in a casserole dish!

How to Make Cheeseburger Casserole

Even if you are not following the WW program this is a great recipe to add to your dinner rotation for the family.  This casserole is packed with protein and veggies that kiddos will love.  Keep in mind that this is also a great freezer meal casserole!!  Love those freezer meals!  
 
 

Ingredients:

2 cups (6 oz) rotini pasta – used WHOLE WHEAT 
2 tsp oil 
1/2 cups onions, finely chopped 
1 garlic clove, finely chopped 
1 lb lean ground turkey  (I have used ground chicken as well)
3/4 tsp salt 
1/2 tsp black pepper 
3 TBSP tomato paste 
2 medium tomatoes diced
2 TBSP Dijon Mustard 
2 cups reduced fat shredded cheddar cheese 
1/4 cup chopped dill pickles

Directions:

1. Preheat the oven to 350 degrees and spray a 9 x 13 inch baking dish with cooking spray. 2. In a large pot of boiling salted water, cook the pasta according to the package directions – drain well.

3. In a large skillet, heat the oil over medium-low heat. Add the onions and cook until soft, about 5 minutes. Stir in the garlic and cook for 30 seconds. 

4. Stir in the turkey and cook until browned; season with salt and pepper.

5. Stir in the tomato paste and mustard, then add the tomatoes and combine well. 

6. Let the meat mixture cook until thickened, about 2 minutes.

7. Toss the meat mixture with the pasta and spread it into the prepared dish. 

8. Top with the cheddar cheese and bake at 350 degrees uncovered until the cheese is melted, about 15 minutes.

9. Remove from oven and sprinkle the chopped pickles over the top and serve.
 
**Makes about 9 cups which equals about 9 servings. 
 

WEIGHT WATCHERS (BLUE) POINT INFORMATION:

I calculated this recipe using the recipe builder on the WW app.  I am currently on the blue program.  Keep in mind that a great way to cut these points is less cheese and a different pasta – I used what I had on hand in my pantry.  

For 9 servings this Cheeseburger Casserole Recipe comes in at 5 points!  Not too shabby for a super filling and yummy recipe that you can enjoy with the family and stay on track!!

What I love about this recipe is that it is easy but it also provides a good amount of leftovers.  YUM!!
