To Turkey or Not To Turkey…That Is The Question

How many of you always have leftover turkey from Thanksgiving and Christmas?  Oh we sure do!  Let me back up first though – I honestly had no idea that some families do not enjoy Turkey on both Thanksgiving and Christmas!  WHAT!?  Is that true??

Okay, sorry, back to my recipe that I now know will be THE recipe we make with all of our leftover turkey from the holidays.

Turkey Pot Pie Soup, I've turned my favorite way to use up leftover turkey from my favorite baked pot pie to a totally comforting soup, Leftover Turkey Pot Pie Soup, Turkey Pot Pie Soup - great for Thanksgiving leftovers! How To Make Turkey Pot Pie Soup

Ingredients:
4 TBSP butter
1 small yellow onion – chopped
2 – 3 celery stalks – chopped
2 – 3 carrots – peeled and chopped
3 cloves garlic, minced
2 bay leaves
3 medium potatoes, diced
1/4 cup flour
14 ounces chicken broth
1 1/2 cup milk
1 tsp thyme
2 cups shredded/chopped turkey
1/2 cup frozen peas
1/2 cup frozen corn
salt and pepper for taste
Oyster crackers

 
Optional ingredients – frozen green beans, mushrooms and mushrooms

Directions:
 
1.  In a large soup pot melt butter.
 
2.  Once butter is melted add the chopped onion, celery and carrots to the pot.  Cook the veggies until they are tender.  This should take about 5 minutes.
 
3.  Add the garlic, bay leaves and potatoes to the pot.
 
4.  Add flour to pot and stir in to make sure it coats all of the ingredients.  The flour will start to dissolve.
 
5.  Add the chicken broth, milk, and thyme to the soup pot.
 
6.  Stir and reduce the heat to low.
 
7.  Let the soup simmer for 20 – 25 minutes.
 
8. Stir in the turkey, peas, and corn – as well as any of the optional ingredients listed above.
 
9.  Season with salt and pepper, to taste and let the soup simmer for another 10 minutes.
 
10.  If the soup is too thick, add another 1/2 cup of milk to the soup.
 
11.  Remove Bay Leaves and serve HOT topped with oyster crackers.  ENJOY!

As this soup was simmering on the stove top we could smell the aromas of “pot pie”!  SO GOOD and even with the long list of ingredients, this is a super easy recipe to enjoy after the holidays.  Keep in mind that the protein can be switched out.  No turkey?  Stop at the grocery store and pick up a rotisserie chicken and use that meat and create Chicken Pot Pie Soup instead!  Add this delicious soup recipe to your meal plan this New Year.

Turkey Pot Pie Soup

Turkey Pot Pie Soup is the best way to use leftover turkey! Easy to make in the instant pot, slow cooker or on the stove-it's healthy & tasty!

    We had turkey for Thanksgiving but with our big family there wasn't much left over. We still have a turkey in the freezer though. This recipe looks really good.

    This is a great recipe! I always freeze my remaining turkey for using in soups but, I never thought to make pot pie soup. This is a great way to use your left over turkey especially since my kids say they get tired of turkey the next day! Maybe I'll bring down some turkey over the weekend and make this.

    I like to make up homemade freezer meals. Individual portions of turkey, stuffing, potatoes, gravy and freeze. Then defrost and reheat for yummy tv dinners.

    This soup looks delicious…especially on a cold day like today.
    I like to buy turkey breasts when they are on sale. They cook great in the crockpot. We enjoy them throughout the year.

    I have to admit I enjoy turkey only on Thanksgiving, by Christmas I'm over the thanksgiving food and ready for something a bit different. In general my family and I like to make other main dishes for the rest of the year. Roast, gumbo, crab, those are more on our menu. Love this recipe though! I can totally see myself incorporting these dishes.
