These maple syrup & bacon filled pancake muffins will make your family smile when you tell them it is time to get out of bed! Breakfast is served with these easy maple bacon pancake muffins.
Preheat oven to 400 degrees and prepare a muffin tin with cooking spray.
In a medium mixing bowl combine all dry ingredients - flour, sugar, baking soda, baking powder, salt, and cinnamon.
In a separate mixing bowl combine all wet ingredients - egg, milk, syrup, oil and vanilla.
Carefully add egg and milk batter into the dry ingredients. Stir to combine.
Once batter is mixed well, add in bacon crumbles and stir to combine.
Spoon batter into muffin tins.
Bake muffins for 12-15 minutes or until golden brown.
When ready to serve, drizzle each muffin with some maple syrup and sprinkle some bacon crumbles on top. ENJOY!!
