Slow Cooker Easy Black Bean Soup is a favorite for me since it is a zero point recipe on WW FreeStyle.  Simple ingredients make this a fast meal to throw together, and it soon becomes a favorite for everyone in the house.

Ingredients

  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 2 cans black beans (do not drain or rinse) 15.25 oz each
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • chopped fresh cilantro

Instructions

  1. Add onion, celery, beans, broth, and spices to a slow cooker. Mix well.

  2. Heat on low for 7-8 hours or high for 3-4 hours.

  3. When ready to eat, mash beans with a potato masher.

  4. Serve topped with fresh cilantro, if desired.
