A light and easy cucumber salad that is filled with great flavor. In just minutes you will have a side dish that can also double as a low WW point meal. Perfect to have on hand for an easy snack or meal option.
Slice each cucumber into very thin slices and add to a large bowl.
Slice the onion into half moons and add to the bowl. Toss to combine
In a medium mixing bowl whisk together the apple cider vinegar, water, sugar, dill weed, salt and pepper into a nice "dressing".
Pour the dressing mixture over the cucumber and onion and toss to fully coat and combine.
Cover the salad with foil or a lid. Chill salad for at least 1 hour prior to serving. Keep the salad in the fridge until ready to serve.
