Copycat KFC Coleslaw

This Copycat KFC Coleslaw is crunchy, sweet and creamy just like the slaw you remember from KFC.  A simple recipe that is the perfect side dish for any summertime gathering.

Ingredients

  • 1 head green cabbage finely chopped using food processor 
  • 1 carrot shredded
  • 1/4 cup white onion finely chopped using food processor 
  • 1/3 cup sugar
  • 1/2 cup mayonnaise
  • 1/3 cup buttermilk
  • 2 TBSP Lemon juice
  • 1 1/2 TBSP white vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. In a medium mixing bowl whisk together the sugar, mayo, buttermilk, lemon juice, vinegar, salt and pepper until completely combined into a delicious dressing. 

  2. Prepare all of the veggies.  Using a grater shredded the carrot and using a food processor finely chop the cabbage and onion. 

  3. Place all prepared veggies in a large bowl and combine.  

  4. Carefully pour dressing over the veggies and mix together until the dressing covers all of the veggies. 

  5. Cover and let chill in the fridge for at least 2 hours (or as many as 8) before serving.  ENJOY!
