Irish Oatmeal Muffins

  • 1 cup dry oatmeal
  • 1 cup whole milk
  • 1 tsp white vinegar
  • 3/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 egg


  1. Prepare a muffin tin with cupcake liners and preheat the oven to 375 degrees. 

  2. In a medium bowl combine whole milk and vinegar.  This process is to sour the milk.  You could also use buttermilk if you have it on hand. 

  3. Add the oats to the mixture.  Stir well, cover, and let the oats/milk mixture rest in the refrigerator for at least 6 hours or overnight.  This will help the oats get soft. 

  4. Once the oats have soaked, mix in the egg.  

  5. Add the sugar and oil to the mixture and beat until smooth. 

  6. Add in the flour, salt, baking powder, and baking soda and stir until well combined.

  7. Fill the muffin tins 3/4 full with batter. 

  8. Bake at 375 degrees for 15-20 minutes or until the muffin top springs back when gently touched and the muffins are lightly browning around the edges. 

  9. Tip - These muffins tend to be very moist, so a little over baked is better than under baked.
