I wish I could say that my family loves to eat their veggies but the truth is…all of us (yes even me) really need to increase our veggie intake. With a somewhat picky eater on our hands and another child that has major texture issues we seem to fail at this piece of parenting. Over the years I have found that “hiding” our veggies in our meals is the best option. I cannot tell you how many fingers I have almost lost due to making slivers of carrots and onions to hide in our recipes. Using Idaho Spuds VeggieMash has changed the way I prepare our family dinners every night. A simple but brilliant item to keep on hand to use for yummy recipes and side dishes.

The VeggieMash comes in three varieties; Mashed Potatoes with Cauliflower & Ranch, Mashed Potatoes with Cauliflower,Butter & Herbs, and Mashed Potatoes with Broccoli & Cheddar. All of these have been a hit with my kids as side dishes to our meal, our favorite is probably the Mashed Potatoes with Broccoli & Cheddar. I wanted to step away from our normal meal plan and get a little creative so I decided to try something totally kid friendly and fun for dinner one night using the VeggieMash. I made some VeggieMash Cheesy Mashed Potato Bombs and guess what? They were a HIT with the whole family!
How To Make VeggieMash Cheesy Mashed Potato Bombs
Ingredients:
One package of VeggieMash Mashed Potatoes with Broccoli & Cheddar, prepared as directed
One tube of refrigerated dinner biscuits – 8 count
1/2 cup diced raw carrots
1/2 cup diced white onion
1/2 cup bacon crumbles
1 cup cheddar cheese – cubed
Directions:
1. Preheat oven as directed on biscuit container.
2. Grease baking sheet with cooking spray.
3. Prepare VeggieMash Mashed Potatoes as directed on package and set aside.
4. Prepare cheese, bacon, onions and carrots by dicing them up and set aside.
5. Unroll biscuits. Take one biscuit at a time and flatten into a pancake shape.
6. Place cheese, onions, carrots and bacon in the middle of the flattened biscuit.
7. Place a heaping spoonful of prepared VeggieMash Mashed Potatoes with Broccoli & Cheddar on top of the bacon and veggies.
8. Carefully pinch the biscuit together at the edges forming a “bomb” with the ingredients inside.
9. Place the “bomb” seam side down on the prepared baking sheet.
10. Repeat this for all 8 biscuits.
11. Bake in oven for 10-15 minutes at temperature directed on the biscuit tube.
12. Once golden brown remove from oven and enjoy HOT!
Looks delicious right? Like I said, my whole family really enjoyed these bombs and I loved that I did not have to have a dinner battle over veggies. Since incorporating the VeggieMash into our daily meal plans we have had less of those battles which means our family meal time is so much more enjoyable.
