A Casserole Dish For Any Occasion

Like I said, I love breakfast and one of the best places to go for brunch or breakfast is Cracker Barrel.  The home style cooking and atmosphere is perfect for any occasion or time of the day.  A great meal and a fun place to shop too!  While I was sitting at home wishing for a yummy brunch out at Cracker Barrel I decided to try my limited cooking skills on a copycat recipe of the well known and delicious Cracker Barrel Hashbrown Casserole.

I am not a Cracker Barrel chef but I do think this recipe hits the spot and it the perfect main dish or side dish for Breakfast, Lunch or Dinner!  Also, when it is time to gather with friends and family, this recipe makes A LOT of hashbrown casserole so it is perfect for sharing!  I cannot wait for that time…friends, family, food and conversation!!

Ingredients:

32 ounces frozen shredded hashbrowns
1/2 cup melted butter
1 10 ounce can of cream of chicken soup
1 pint of sour cream
1 cup onion finely chopped
2 cups shredded colby jack cheese
1 TBSP pepper

Directions:

1. Preheat oven to 350 degrees and prepare a casserole dish with cooking spray.

2. Combine all ingredients in a large bowl reserving 1/2 cup of cheese for topping.

3. Place in a 9×13 casserole dish and top with reserved cheese.

4. Bake for 45-55 minutes or until hot and bubbly.

5. Serve hot!

Easy and Delicious Hashbrown Casserole

With minimal ingredients and prep time, there is no reason you cannot enjoy this family favorite Cracker Barrel Hashbrown Casserole!  YUM!!  Keep in mind that you can substitute the cream of chicken soup with cream of cheddar soup to make this a vegetarian option.  Another tip that I found to work out best was to use my hands to mix all of the ingredients properly…it is messy but worth it.  I am very excited to share this delicious Hashbrown Casserole with friends and family in the future, I know they will love it as much as I did!

Thanks for the recipe. I’m going to use it for dinner on Christmas Eve. I love to eat at Cracker Barrel. Sadly, the closest one is over 1.5 hours away.
