It is hard to believe that school has been in session for close to a month now for my kids. I had a goal this year of trying to stay out of the lunchbox rut by creating yummy, filling and healthy lunches for my kids by thinking outside the sandwich bread. We are one month into this goal and I think I am doing pretty great, and I haven’t heard any complaints from the kids either. One of our favorite lunchbox ideas were these delicious Tuna Salad Pita Pockets. So good and super easy to prepare, even on those early school mornings.

We are so thankful that both of our kids enjoy tuna. Not all kids like seafood but my kids certainly do so I am always looking for ways to incorporate it into their diets. How To Make Delicious Tuna Salad Pita Pockets For Lunch
Starting with the StarKist Selects E.V.O.O. makes my tuna salad recipe even better than what we had before finding this line of tuna pouches. Once you open that pouch you will see and smell the difference and you will never go back! Like I said, for Jude and Teagan’s school lunches I have a goal of keeping it creative for the whole school year. Creative does not mean difficult, but it does mean switching things up a bit. For my tuna salad pita pockets, I added some of my kids’ favorite veggies and added a whole-wheat pita pocket, those simple additions made my kids happy and full!
Ingredients:
Whole Wheat Pita Pockets
StarKist Selects E.V.O.O. Yellowfin Tuna with Sun-dried Tomato
3 TBSP Mayo
2 TBSP Yellow Mustard
1 tsp celery seed
1/4 cup black olives sliced
1/4 cup chopped dill pickles
1 Roma tomato – sliced
1 avocado – sliced
Directions:
- Prepare the tuna salad in a small mixing bowl by emptying one pouch of StarKist Selects E.V.O.O. Yellowfin Tuna with Sun-dried Tomato into the bowl.
- Add mustard and mayo to the tuna and mix well with a fork.
- Sprinkle in celery seed, sliced olives and chopped dill pickles and combine well.
- If you need your tuna salad to be a little more “wet” add a little more mayo to your bowl and mix well.
- For easy prep I make my tuna salad the night before and have it chilling overnight. Cold tuna salad is the best!
- Stuff each pita pocket generously with prepared tuna salad.
- Put a few slices of Roma tomatoes and slices of avocado into the pocket as well.
- Enjoy cold!! Delicious!
Adding those olives, pickles, tomatoes and avocados makes this pita pocket the perfect lunch for adults and kids alike. It is delicious but full of protein and fresh veggies that will help us all attack those afternoon challenges with strength!

Meal Plan!
Yes, just like you meal plan for your family dinners, it is time to make a meal plan for school lunches. This will help you be prepared by doing your shopping ahead of time. Write this lunchbox meal plan out for everyone to see so there are no surprises when mom is asked what is in the lunchboxes.
Individually Prepared Sides.
After I do my shopping I put fresh veggies and fruit into baggies and put them in the refrigerator for easy snack options or for lunchbox sides. These are so much better than reaching for processed items to add to a lunchbox.
Get the Kids Involved.
This starts with the meal plan but can also be a part of the process of actually packing the lunchbox. Designate a part of your kitchen as the “lunch packing station” and spend some time there with your kids the night before to get lunch ready for the next day.
