There has been a lot of talk about Dragons and Dragon Fruit around here lately! A few weeks ago I shared our little “Last Day of School” celebration with the kids. We watched the newest How To Train Your Dragon as a family and had a special dragon themed snack. Since that experience we have been enjoying the Tropical Dragon Fruit Smoothies we made for our movie watching party and I wanted to make sure you saw this perfect summertime smoothie recipe that we are LOVING!
Tropical Dragon Fruit Smoothies
I am sure it is pretty clear why I picked up some Dragon Fruit for our How To Train Your Dragon watch party but what might surprise you is that this was our first experience using Dragon Fruit in anything. I was so nervous and had no idea what to expect. I even had to google how to cut into a dragon fruit and what part of the fruit was edible. HA!
Now that I know, we will be adding this beautiful fruit to our recipes from now on. Dragon fruit really complements some of our favorite fruits – Mango, pineapple and pears so adding dragon fruit into our diet is pretty easy. Dragon fruit is not very sweet and the texture kind of mocks a kiwi so when you are planning your recipes make sure you take those specs into account.
INGREDIENTS:
(makes 2 smoothies)
1 dragon fruit
1 cup mango
1 cup pineapple
1/2 cup plain Greek yogurt
1/4 cup water
DIRECTIONS:
1. Like most smoothies, there isn’t much to this recipe. The hardest part for me was figuring how to use the dragon fruit properly. The skin is not edible so you will need to cut the dragon fruit in half and scoop out the soft fruit inside each half.
2. Place dragon fruit, mango, pineapple, Greek Yogurt and water into a blender and pulse until completely blended to your liking. If the smoothie is too thick you can always add extra water.
3. Serve immediately and enjoy!
