Easy Meatball Sub Casserole

The kids are back in school which means dinner time just got a bit crazier and at times a little rushed.  Finding recipes that are easy to make on less time but also are kid approved is the goal for any parent at this point of the school year.  Finding that routine can be hard but having a great meal plan and a good list of kid approved and easy recipes on hand can make this transition time a little easier. 

This Easy Meatball Sub Casserole is the perfect kid approved and busy night dinner recipe that you will love!  Yes, the kids will love it but so will the parents.  Delicious and yet so simple.  

Easy Meatball Sub Casserole

This Easy Meatball Sub Casserole is a super easy casserole dish that tastes like a meatball sub but in casserole form. So good and a family favorite!

A lot of the ingredients you need for this recipe you might already have on hand.  Again, another great reason why you need to add this to your meal plan rotation.  

Ingredients:

  • 1 package of frozen garlic bread
  • 4 ounces cream cheese, softened
  • 1/4 cup Plain Greek yogurt
  • 1 TBSP Italian seasoning
  • 1 TBSP Parsley 
  • 2 cups Mozzarella cheese
  • 2 1/2 cups pasta sauce
  • 25-30 Frozen Turkey Meatballs

Directions:

1. Bake frozen garlic bread according to package. Once baked, carefully cut the garlic bread into inch pieces.

2. Spray 8×8 baking dish with cooking spray and place the garlic bread pieces in the dish evenly.  

3. In small bowl, mix cream cheese, Greek Yogurt, Parsley and Italian Seasoning until completely combined.  

4. Sprinkle 1/2 cup mozzarella cheese over garlic bread. Spread cream cheese mixture over cheese layer.

5. Cover cream cheese layer with pasta sauce and sprinkle an additional 1/2 cup mozzarella cheese over pasta sauce.

6. Arrange meatballs on sauce and top with remaining mozzarella cheese.

8. Sprinkle additional Italian seasoning over cheese and meatballs.

9. Bake for 25-30 minutes at the same temperature you baked the frozen garlic bread or until meatballs are cooked through and cheese has melted.

10.  Serve immediately and ENJOY!

A Casserole For Everyone!

This really does taste like a yummy meatball sub sandwich but just in the form of a casserole.  While this recipe includes a lot of the traditional ingredients you but on a meatball sub, in true casserole form you could add other seasonings and ingredients like onions or peppers.  YUM!  

For this recipe I used frozen turkey meatballs but you could use ground beef meatballs if your family likes those better.  Also, if your family is not into garlic bread you could use a loaf of french bread as the “breading” rather than the frozen garlic bread.
