As the cooler evenings approach it is time to switch out some of our hot weather recipes with our cold weather recipes.  Comfort food at its finest is always food that will warm you up from the inside.  Now, just because the season is changing doesn’t mean I am ready to spend hours in the kitchen cooking dinner for the kids.  

This Easy Frito Pie Casserole is the perfect warm you up from the inside dinner that is fast to make and a kid approved meal that will provide your family with leftovers too!  A special twist on a walking Frito bag taco.  Yummy!  

Easy Frito Pie Casserole

Ingredients:

1 bag of regular size Frito Corn Chips 
1 pound of ground beef (or ground turkey)
1/2 cup chopped onion 
1 can black beans, drained and rinsed 
1 can enchilada sauce
2 cups shredded cheddar cheese 
2 Roma tomatoes, chopped 
sour cream 

Directions:

1. Prepare a 9×13 baking pan with cooking spray and preheat the oven to 350 degrees. 

2. In a large skillet brown the ground beef until no pink is left.  Drain grease from skillet. 

3.  Add chopped onions, black beans and enchilada sauce to the skillet with the beef and mix carefully.  Let the mixture simmer for 5 minutes.  

4. While meat mixture is simmering, place half of the Frito corn chips in the bottom of the prepared baking pan in an even layer. 

5. Carefully pour meat mixture over the layer of Frito corn chips. 

6. Sprinkle shredded cheese over the meat mixture evenly. 

7. Place the remaining Frito corn chips over the cheese. 

8. Bake at 350 degrees for 20-25 minutes.  

9.  Top the casserole with chopped tomatoes and a side of sour cream.  Enjoy hot!  

Well there you have it.  Now, keep in mind that you can double or even triple this recipe for some great freezer meals or leftovers for the weekend.  It is a great recipe that can be spiced up with the addition of jalapenos, spicy enchilada sauce or even using the chili Frito corn chips.  Add other taco toppings to your casserole like salsa, green onions, lettuce and guacamole as well.  The options are endless and will be a family favorite this winter season.
