Strawberry Peach Pie Bites

This time of the year brings a lot of fresh fruit, including peaches and strawberries.  That combination is one of my favorites but when you add cinnamon, sugar and a yummy crescent roll we are looking at some perfection for a summertime treat.  What I love about these mini pie bites is that they are really easy to make and can be enjoyed for a dessert or even served at your next brunch gathering.  No matter how you enjoy these Strawberry Peach Pie Bites they will make your taste buds happy!

Ingredients:

1 Package of Refrigerated Crescent Roll Dough
1 Large Peach cut into 8 wedges – you can also use frozen peaches
4 Strawberries cut into 16 slices
2 TBSP Butter melted
2 TBSP Sugar
1/2 tsp cinnamon

Directions:

1.  Preheat the oven to 375 and prepare a baking sheet with parchment paper.

2. Unroll and separate the dough pieces on to the baking sheet.

3. Mix together the sugar and cinnamon in a small bowl.

4. Sprinkle approximately 1/2 tsp  evenly over each piece of dough.

5. Melt the butter and stir in the fruit pieces until evenly coated.

6. Place 1 peach slice and 2 strawberry slices at the long end of each piece of dough.

7. Carefully roll it up like you would a regular crescent roll, pinching the sides closed to keep the fruit inside.

8. Brush any remaining butter on top of each pie and sprinkle with cinnamon.

9. Bake at 375 degrees for 12 to 14 minutes or until golden brown.

10.  Enjoy warm!!

Pie Bite Treats For Summer

I would love to tell you that I make everything from scratch when I bake and cook but if you have been around here long, you know that when I bake or cook I want it to be easy!  Using the refrigerated crescent rolls is a great way bake something yummy but without the extra work…plus, who doesn’t love a good crescent roll?

While I decided to go with the pie filing of peach and strawberry, you can use any fresh or frozen fruit you have on hand to make some yummy mini pies.  I think the next time I make these pie bites I will be using blueberries and some lemon curd.  DELICIOUS!!  There is no reason to feel like you have to be in the kitchen for hours to prepare something tasty for your family.
