Chocolate Peanut Butter Banana Bites
I don’t know about you, but when the summer heat hits all I can think about it sweet cold treats! While I haven’t been super careful with my diet or exercise lately…thanks ‘rona…I do know that running to the freezer for a bowl of ice cream every day is not going to help me reach my goals anytime soon but sometimes I need to crush that craving!
I decided to use some of my bananas I got from a local produce co op to try a new refreshing, easy to make treat that not only helps me get that sweets craving under control but provides me with some fruit and protein as well! My Frozen Chocolate Peanut Butter Banana Bites are not the prettiest but they are pretty delicious! The challenge is to still find that moderation when enjoying them because – peanut butter and chocolate!! What could be better!!?
Ingredients:
2-3 bananas – ripe but not too ripe!
1/4 cup peanut butter
1 cup dark chocolate chips or chunks
Directions:
1. Slice bananas into about 1/4 inch slices.
2. Set one half of the banana slices aside. Lay the remaining slices flat on a baking sheet lined with parchment paper.
3. Place peanut butter in a microwave safe bowl. Heat the peanut butter in the microwave for about 30 seconds until it is smooth and easily spreadable.
4. Spoon about one 1/4 teaspoon of peanut butter on the banana slices arranged on the baking sheet.
5. Top the peanut butter with the other banana slices to create a sandwich. Place banana bites in the freezer for at least 2 hours.
6. When the banana sandwiches are frozen, prepare the chocolate by carefully melting the chocolate in the microwave.
7. Take banana bites from freezer and carefully dip each bite into the melted chocolate making sure to cover all sides of the banana bites.
8. Place dipped bananas onto parchment paper and return bites to freezer for 15-20 minutes or until the chocolate is set.
9. Remove from freezer and enjoy! The remaining Chocolate Peanut Butter Banana Bites can be kept in an air tight container in the freezer.
Delicious Sweet Treat
I am pleased with my Chocolate Peanut Butter Banana Bites and will be making another batch soon. They keep great and are really easy to make. One tip for those that might have sensitive teeth. Do not pull these right out of the freezer and chomp down…give them a few minutes to thaw. Still delicious but no sensitivity for your teeth.
I think peanut butter and bananas are a great snack so adding some chocolate and making them nice and frosty makes it even more of a treat. I am excited to keep making these bites through out the summer.
