These Caprese Tortellini Skewers appetizer is a light and refreshing recipe that is perfect for any event. Caprese is always a great appetizer to serve but especially nice for a warm summer day. An easy recipe that will be a hit with your family and friends.
Caprese is one of my very favorite things to enjoy when eating out. To be honest, I do not make it enough in my own home but when I do I never regret it! SO GOOD!! Years ago I created a Caprese Salad Skewers Appetizer using Mozzarella Sticks and it was perfection. But today I am sharing an upgrade version using the traditional tomato, basil and Mozzarella Cheese but with an addition of a yummy Tortellini pasta.
Caprese Tortellini Skewers
Ingredients:
1 pint red grape tomatoes
Fresh basil leaves, cleaned and dried
16 oz package of whole milk fresh mozzarella cheese, cut into cubes
1 package of fresh or frozen tortellini (any flavor tortellini can be used)
1 bottle of balsamic vinegar glaze
Cocktail picks
Directions:
1. Bring a large pot of salted water to a light boil. Add the package of tortellini, and cook for approximately 12-14 minutes, or until al dente. Drain well, and set aside.
2. Prepare ingredients – wash and dry tomatoes, clean and dry fresh basil leaves, cube mozzarella cheese.
3. Using a cocktail pick, first add a red grape tomato.
4. Next add 1 basil leaf to the cocktail pick.
5. Then add a cube of fresh mozzarella cheese to the skewer.
6. Lastly add one tortellini to complete the Caprese Tortellini Skewer.
7. Continue making multiple skewers following the same directions.
8. Arrange on a plate or tray, with all skewers standing upright. Using the bottle of balsamic vinegar glaze, drizzle the glaze over all of the skewers.
Cute appetizer right? And I have to tell you, so GOOD!! Keep in mind that these Caprese Tortellini Skewers can be prepared ahead of time just hold off on drizzling the skewers with the balsamic vinegar glaze until you are ready to serve and eat. The hardest part about this recipe is not eating the ingredients while building the skewers!! HA!
