Funfetti Cake Batter Cookie Bars

Raise your hand if you love sugar cookies and Funfetti Cake!!  Let’s combine those favorites into a dessert that will crush any sweet tooth! Funfetti Cake Batter Cookie Bars are super easy to make and so yummy!

Funfetti Cake Batter Cookie Bars

Even though I am a chocolate lover you better believe that I will gobble up anything that is Funfetti Cake!  There is something so fun and delicious with a simple Funfetti Cake.  Now, I enjoy a good sugar cookie once in a while as well…time to combine these two favorites into something that everyone will love!  

Ingredients:

1 pouch sugar cookie mix
1 box white cake mix
3 large eggs
1 cup melted butter, salted
1 tsp vanilla extract
3 TBSP rainbow sprinkles
1 can of white/vanilla frosting

Directions:

1. Heat oven to 350 degrees. Spray a 9×13 baking dish with cooking spray or line it with parchment paper. Set aside.

2. In large mixing bowl, combine the dry sugar cookie mix, dry cake mix, eggs, melted butter, and vanilla extract. Beat with a handheld blender until combined for about 1 minute.

3. Add in the sprinkles and very gently (so the colors don’t bleed) stir in the sprinkles using a wooden spoon or spatula.

4. Dump the batter into the prepared baking dish and spread out evenly. Use your hands to help spread it out.

5. Cook for 30-32 minutes. Edges will be golden brown and puffier than the rest of the bars. The center will look done and a toothpick inserted into the middle should come out clean. Let cool completely for about 1 hour in the pan.

6. Spread the frosting over the cooled cookie bars. Sprinkle some additional sprinkles over top the frosting.

7. Cut into bars into squares right away and serve!

A Dessert For Every Season and Occasion 

Not only is this dessert super easy to make and it can feed a good crowd but it is also a great recipe to keep on hand for any occasion, holiday or season! Simply change up the sprinkles to get a different look. Favorite color sprinkles for a birthday treat. Get some Christmas sprinkles and make Christmas cookie bars! Find some heart shaped sprinkles for Valentine’s Day.  Don’t forget Halloween, Thanksgiving or just some bright colorful sprinkles to celebrate summer! Lots of ways to change up this recipe.
