Crock-Pot Crack Chicken Soup

Call this loaded chicken soup recipe whatever you like – Crack, Irresistible, Delicious, Better Than Sex – there is no right title but I promise you, this recipe will quickly become a family and friend favorite.  This time of the year is the perfect time to try new soups.  A few weekends ago, I hosted a small gathering of friends for a soup night…this group of friends have been in my “pod” since the pandemic started.  We all felt like we needed a little soup in our lives so we had a soup night!  While all of the soups available were delicious, I think this one might be my favorite.  

Ingredients:

2 pounds boneless skinless chicken breasts
2 -8-oz packages cream cheese
1 package Ranch Seasoning and Salad Dressing Mix
1 pound bacon, cooked and chopped (can use turkey bacon)
4 cups chicken broth
1½ cup shredded cheddar cheese  
Optional: spinach, broccoli, or mushrooms

Directions:

1. Place chicken, cream cheese, ranch dressing mix, bacon, and chicken broth in a Crock-Pot.

2. Cover and cook on LOW for 6 to 8 hours.

3. Remove chicken from Crock-Pot, place in a large bowl and shred with two forks.
 
4. Return shredded chicken to the Crock-Pot and stir.
 
5. Add cheddar cheese into the soup and stir. Cook until melted.
 
6. If you are adding spinach, broccoli or mushrooms, add them when you add the cheese.  
 
7. Serve HOT!  For extra goodness, sprinkle crumbled bacon and extra shredded cheddar cheese on top of each serving.  ENJOY!

TIP:  If there are some clumps of cream cheese in the soup, use a whisk when shredding the chicken to get all of the cream cheese incorporated.

Delicious Loaded Chicken Soup

There really is no other way to describe this soup – delicious and addicting.  The addition of the ranch powder is so good and adds the best flavors.  I love any slow-cooker recipe because you literally just dump the ingredients in the slow-cooker and let it do the work for you!  While this soup is super filling, I have a feeling you will be asking for seconds!  Add this yummy Crack Chicken Soup to your cold weather soup list!
