When I think about the first few months of 2021, I am pretty pleased with what I have achieved but one area that I am really trying hard to work on is eating healthier foods. This time of the year I just want all of the comfort food and convenient food – most of the time that does not go well when it comes to choosing healthier foods.
I have been on Weight Watchers for a while again and I love it. It allows me to find moderation and still enjoy some of my favorites. One of those favorites is egg rolls. SO GOOD! Great appetizer, great meal, great snack…RIGHT?? Well, I have recipe that I make at least once a week for myself. This Easy Egg Roll in a Bowl recipe is a quick and healthy meal.
Simple Ingredients For An Easy Meal Prep
Not only do I love the flavor of this meal but I love that with just a few simple items I can create a meal that provides great nutrition and eases that craving for comfort food and take out! Simple, fresh flavors create the best ONE PAN weeknight meal!
Ingredients:
1 pound ground chicken (you can also use ground turkey, ground pork or ground beef)
1 large bag coleslaw (with carrots)
1 bunch green onions, diced
1 TBPS Toasted Sesame Oil
1 TBSP Rice Vinegar
1/4 cup low sodium Soy Sauce
1 tsp ground ginger
2 TBSP minced garlic
Directions:
1. In a large skillet brown the ground chicken. Cook and stir until no longer pink. Drain any grease and return meat to skillet.
2. While the meat is cooking, prepare the sauce by combining the Toasted Sesame Oil, Rice Vinegar, Soy Sauce, and Ginger in a bowl and carefully whisk together.
3. Add diced green onions and garlic to the skillet. Cook until onions are tender.
4. Carefully add the coleslaw mix to the skillet – stir to combine with the meat mixture.
5. Add the prepared sauce. Stir and cook until cabbage is cooked down and a bit wilted. Around 6-8 minutes.
6. Remove from heat and add salt and pepper as desired.
7. Serve HOT and ENJOY!

- Do not skip the toasted sesame oil – this is what gives you that classic Egg Roll taste you are craving. Keep the toasted sesame oil on hand, you will find other recipes to enjoy it in too!
- Do not over cook the coleslaw – a little wilt is good but you will enjoy that crisp crunch when eating!
- Add more! Add more veggies – carrots, onions, peppers
- Fluff it up – make you want to add some “fried rice” to this egg roll? Add a package of frozen cauliflower rice before adding the coleslaw. I promise this is a yummy addition.
