Honey, Basil & Peach Baked Brie
I have a love of all things Brie! And I have to be honest, when I was first introduced to Brie I thought it was a cheese that I would never be able to incorporate into a recipe because I was not fancy enough. BUT friends, I was wrong. In 20 minutes I can create a delicious skillet of baked brie topped with all kinds of fresh fruit and herbs.
Sometimes I think that baked brie is a very winter recipe but I decided to elevate one of my favorite baked brie recipes and add some colorful fresh peaches. While peaches are not in season here yet, I had some in the deep freeze from last year just waiting for a yummy recipe! I am so happy with how this turned out. Side note – you need to try this easy Honey Walnut Baked Brie too!
Ingredients:
1 wheel of brie
3 peaches – diced
1/4 cup honey
1 bunch of basil – chopped
Directions:
1. Preheat oven to 350 degrees.
2. Remove brie wheel from packaging but leave the brie rind on. Place brie into a small cast iron skillet. If you do not own a cast iron skillet you can use any baking dish.
3. Place diced peaches on top of the brie and bake brie for 10-15 minutes at 350 degrees.
4. Remove from oven and drizzle brie and peaches with honey and then top with chopped basil.
5. Place bake into the oven for another 5 minutes.
6. Once brie is baked, remove from oven and cut a small wedge out of the wheel to allow the cheese to start flowing! SO GOOD!
7. Serve in the cast iron skillet with crackers or pieces of bread for dipping. ENJOY!!

Oh so ooey gooey!! When I first made this recipe I ended up making it my lunch, it was so good. The sweet peaches really add to the tangy brie. I cannot wait to make a batch of this Honey, Basil and Peach Baked Brie for one of our summer gatherings. Not only is it easy to prepare it will be a hit with our guests.
