Best Mashed Potatoes
Time to share some of my favorite recipes for this season. Like all of my recipes, these have to be super easy because LIFE! Part of enjoying the holiday season is being able to provide a yummy meal for my friends and family but still have time and energy to enjoy my guests. Having easy recipes like this one on hand make that possible.
Ingredients:
1 carton of Swanson® Chicken Broth (4 cups)
6 large potatoes
2 TBSP butter
1/2 cup heavy cream
1/2 cup sour cream
2-3 TBSP black pepper
Directions:
1. Prepare potatoes by peeling and dicing them into 1 inch pieces.
2. In a large pot add the Swanson® Chicken Broth and diced potatoes. Bring pot to a boil.
3. Once boiling, reduce heat to medium and cover with a lid.
4. Let potatoes cook for 10-15 minutes.
5. Drain potatoes, making sure to keep 1/4 cup of broth from the pot.
6. In a large bowl combine the cooked potatoes, 1/4 cup cooked broth, butter, cream, sour cream and black pepper.
7. Using a hand mixer, mix potatoes until nice and creamy! Enjoy potatoes as a side dish with your holiday meal. Delicious!

Now that I am having the opportunity to bring side dishes to the family dinners I am excited to have my family try this recipe. I had no idea about this fancy trick that literally takes no more time than my “normal” mashed potato recipe. Honestly, boiling the potatoes in the Swanson® Chicken Broth is brilliant. Talk about adding great flavor to the potato itself.
