One way that Jeremy and I have tried really hard to save money is by meal planning. I have posted about this before a couple other times and I am proud to say we are still doing this! We sit down every Sunday or Monday and make a plan for our meals for the next week. So far we have tried about 4 new recipes too which has made the new process a lot more fun! My goal (on not busy weeks) is to try 1 new recipe a week.
This week we tried a yummy Pumpkin Bisque. Something that worked perfect for our first measurable snow storm yesterday! The smell of pumpkin warmed the house. Yum!
Pumpkin Bisque Recipe
Ingredients –
~30 ounces of canned pumpkin
~30 ounces of chicken stock
~3 TBSP of Butter
~1/2 cup of chopped onions
~1/2 tsp of Thyme
~2 bay leaves
~2 TBSP of Basil
~1 cup of milk
~1 cup of heavy cream
Instructions:
In a large pot – Saute onions, Basil, bay leaves, and Thyme with the butter until the onions are translucent.
Add pumpkin and chicken stock.
Bring to a simmer.
Add the milk and cream to the pot. Continuously stir for 15 minutes.
Add salt and pepper for taste.
After 15 minutes – Serve!
This was an easy and very cheap meal. We served with yummy artisan bread.
1 pot of bisque makes about 6 servings.

I love pumpkin & I love soup but I'm not so sure about combining the two. Perhaps one day I'll get brave and try it.
