The point of this blog hop is to give all of us hard working women some ideas on how to save money! I have said this over and over in a lot of my blog posts but I will repeat – MEAL PLANNING is the key to saving money!
A little report for ya – as of January 29th Jeremy and I have only eaten out 1 time!! THAT IS HUGE for us! We have meal planned for 3 weeks and we saving money. I have to admit that I do flinch a little at the grocery store when I see the bill but in the long run I know we are doing better for our check book!
On top of meal planning I made a goal for us for the month of February to save EVERY SINGLE reciept of EVERY SINGLE transaction we have. I want to write everything out on a calendar day by day and really take a close look at where our money is going. So far we have been successful at this task. More to come on that later.
With out further ado – another new recipe from Weight Watchers!
Pie-Style Spanakopita
Prep: 15 mins Bake: 30 mins Serves: 6
1 c fat-free ricotta cheese
4 scallions, chopped
1/2 c crumbled reduced fat feta cheese
1/2 c snipped fresh dill
1 large egg, lightly beaten
1/4 tsp salt
10 (9×14 inch) sheets frozen phyllo dough, THAWED!
1 – Preheat oven to 375 degrees. Spray shallow 1 1/2 quart shallow casserole dish or 9 inch deep dish pie plate with nonstick spray.
2 – Mix together all ingredients expet phyllo in large bowl.
3 – Lay 1 sheet of phyllo in prepared casserole dish, allowing it to extend over rim of dish; lightly spray with nonstick spray. Repeat with 3 more sheets of phyllo, placing corners at different angles and lightly spraying each sheet with nonstick spray. Fold edges of phyllo in to form 1 1/2 inch high rim.
4 – Spread spinach mixture over phyllo. Lightly spray 1 of remaining sheets of phyllo with nonstick spray; crumple loosely and palce on top of filling. Repeat with remaining 5 sheets of phyllo. bake until filling is heated through and phyllo is golden, andbout 30 minutes. Let stand for 10 minutes before serving.
Per Serving (1/6 slice of pie) = 5 PointsPlus Value
For our dinner we paired one slice of Spanakopita with a small pork chop. Very filling meal for less than 8 PointsPlus!

I totally agree about meal planning! Once I'm not pregnant, I'm definitely going back to it! It's just so hard when you plan meals, and then don't want them, lol.
