Time to share a treat with you all!
I saw a recipe for Strawberry Lemonade Cookies on Pinterest and decided it would be a perfect dessert to have the day before Easter while we had my parents over for Easter Egg Coloring fun.
I am so pleased with what we created and have to share this SUPER easy, cheap and YUMMY recipe with you all!
Pink Lemonade Cookies
Makes about 40 cookies
2 PP weight watchers
Ingredients:
1 (18.25 ounce) package lemon cake mix
1 (18.25 ounce) package strawberry cake mix
4 eggs
1/3 cup vegetable oil (for each batter)
2 teaspoons pure lemon extract
2/3 cup confectioners’ sugar for decoration

Directions:
1. Preheat
oven to 375 degrees.
2. Pour
lemon cake mix into a large bowl and the strawberry cake mix in another bowl.
Stir in 2 eggs, 1/3 cup vegetable oil, and 1 tsp lemon extract to each flavored
cake mix until well blended.

3. Take 2
rounded teaspoons of lemon batter and roll into a ball. Do the same with the
strawberry batter. Combine the lemon and strawberry dough to make one large
ball.

4. Drop
the dough into a bowl of confectioners’ sugar. Roll them around until they’re
lightly covered. Once sugared, put them on an ungreased cookie sheet.
5. Bake
for 10 minutes in the preheated oven, until bottoms are light brown and the
insides are chewy. Transfer to wire rack and let cool completely before
serving.
Makes about 40 cookies and for those of you on Weight Watchers they are only 2 PP a cookie!! Hello!!! Nom Nom!! Something sweet for Spring!!
