Who doesn’t love one dish meals? They are simple and full of every food group (almost). This is one of my dad’s very favorite dishes so I was very excited to make it for our Easter Egg coloring dinner last week. It was a hit and I didn’t have to spend hours in the kitchen! Perfect! Also, toddler approved! Well except for the green beans. 😉
Shepherds Pie Recipe

Ingredients:
1 pound of ground beef (or Turkey)
3/4 cup of water
3/4 cup of water
1 package of frozen mixed vegetables (peas, corn, carrots and green beans)
1 package of taco seasoning
1 cup of shredded cheddar cheese
1 cup of shredded cheddar cheese
2 cups of cooked instant mashed potatoes
Directions:
1. Preheat oven to 350 degrees.
2. Cook the beef in skillet, stirring occasionally, over medium heat until brown and cooked through. Drain fat.

3. Add taco seasoning and water – mix well. Let simmer for 6 minutes.
4. While meat is cooking, prepare instant mashed potatoes as directed on package.

5. Start layering your pie. I used a deep round baking dish. Spoon the beef mixture into dish first.
6. Sprinkle cheese on top of the beef. Add the frozen vegetables on top of the cheese.
7. Spread mashed potatoes over the vegetables.
8. Bake for 25 minutes.
9. Enjoy hot! Will make about 8 servings.
