Lunch Lady Peanut Butter Bars #Recipe

Remember when you walked into the school cafeteria and you saw that Peanut Butter Bars were on the dessert menu?  I do!  Yum!  There was something so great about the HUGE pan of Peanut Butter Bars that made the afternoon so much better in grade school.  I recently found out that one of my classmates had the coveted Lunch Lady Peanut Butter Bars recipe – I had to recreate these treats!  I was pleasantly surprised at how easy this recipe really was.  Yum!

Ingredients:
For the Peanut Butter Base –
*1 cup of butter
*1 1/2 cups of creamy peanut butter
*2 cups of smashed up graham crackers – no clumps!
*2 cups powdered sugar
For the Chocolate Topping –
*1 1/2 cups chocolate chips
*4 TBSP peanut butter

Directions:

1.  To make the Peanut Butter Base.  Melt the Butter and Peanut Butter in a microwaveable bowl for 90 seconds.  Mix well.  

2.  Combine the Graham crackers and the powdered sugar in a separate bowl – mix well.

3.  Add the Butter mixture to the cracker and sugar mixture.  Mix well.

4.  Spread Peanut Butter Base in a 9×9 pan.  
5.  To make the Chocolate Topping.  Combine the chocolate chips and 4TBSP of peanut butter in a microwavable bowl.  Microwave for 30 seconds, mix well, microwave for 30 seconds, mix well.  Continue until the chocolate and peanut butter mixture is smooth.

6.  Pour chocolate over the peanut butter base.  
7.  Refrigerate until chocolate is hard and set.  

8.  Cut into squares and enjoy!
