Once summer shows her face we throw our food on the grill whenever possible. Recently, we decided to try something new for our summer dinners. This weekend we grilled up and devoured some Tyson Cornish Hens paired with a Kikkoman Teriyaki chicken marinade and topped with a Teriyaki Mango Salsa. Oh goodness…this recipe might sound complicated but here’s the truth…it isn’t and we will be doing this dinner again soon.
I decided to use the Kikkoman Teriyaki as is for our marinade. I am a big fan of easy prep work and using this pre-made chicken marinade made this dinner idea even better. Cornish Hens aren’t usually grilled but like I said, we LOVE to grill. Honestly, turning on an oven in the middle of summer makes me crazy! I do not like to add more heat to our home when I am already hot! This was the first time we had grilled these hens so we also had to learn how to properly grill them.
Spatchcocking…have you heard of that before? We hadn’t but when I looked up how to best and quickly grill Cornish Hens this word was in every link. So…we learned to Spactchcock our Hens. I made the man of the house do this part.
To spatchcock chicken you should have the chicken completely thawed and ready for grilling. Step One – using sharp kitchen shears cut the breastbone out of the chicken.
Step two – flip the chicken over. Notice how flat the bird is? This is why spatchcocking chicken helps you quickly grill your hen. Basically by doing this you are butterflying the Cornish Hens.
Step three – with the kitchen shears remove the backbone of the chicken. Spatchcocking complete!
For our marinade we used a gallon size zip-lock bag. Placed the hens into the bag and then put about 1 cup of the Kikkoman Teriyaki sauce into the bag, covering the meat completely. Sealed the zip-lock and placed in the refrigerator for about 4 hours.
We grilled our marinaded Cornish Hens for about 15 minutes on each side of the hen. We like to grill directly on the grill to get that grilled taste! Yum!! The moment the chicken hit the grill it smelled amazing. The Kikkoman Teriyaki aroma filled our deck and we were instantly ready for dinner!
Delicious! The Grilled Cornish Hens looked fantastic on the grill. As the hubby was grilling these beauties I was inside preparing our Grilled Cornish Hen topping. Another easy yet taste bud exciting recipe!
Teriyaki Mango Salsa

Ingredients:
1/2 red bell pepper, diced
1/2 white onion, diced
1 mango, peeled and diced
1/4 jalapeno pepper, diced
1 avocado, diced
juice of one lime
1 – 10 ounce can of crushed pineapple
1/2 white onion, diced

1 avocado, diced
juice of one lime
1 – 10 ounce can of crushed pineapple
1/4 cup of chopped cilantro
1/2 cup Kikkoman Teriyaki Sauce
1/2 cup Kikkoman Teriyaki Sauce
Directions:
1. Prep all of the ingredients as directed.
2. Put all ingredients into a food processor EXCEPT the Avocado.
3. Blend until Salsa consistency.
4. When ready to serve on Grilled Cornish Hens top the hens with the salsa and then add the chopped avocado.
When we sat down to dinner I instantly felt like we had found a perfect summer dinner. We used the grill and we had fresh fruits and veggies on our plate. The colors were fantastic and the taste was perfect. The Grilled Cornish Hens were a hit with the kids too. I think the simple yet flavorful Kikkoman Teriyaki sauce was just enough flavor for the kids. Chicken is always a hit with them but this time they both wanted seconds! WIN!! The extra punch of flavor for the adults came with the Teriyaki Mango Salsa topping! SO GOOD and a great companion to the Tyson Cornish Hens.
