Summer is here!  I don’t know about you but when summer hits my cooking, meal planning and baking bug goes on hiatus!  I think it is the heat.  I never really want to turn on the oven or stove so until we have something planned to grill or put in the crock pot we find ourselves hitting the drive thru!  Yikes! Not good for us or our checkbook.  
Recently, I was trying to find some cool eats for hot days.  Another thing that hits me when it is warm out is that I do NOT like eating hot foods.  The kids and hubby will only accept PB&J sandwiches every other day!  (KIDDING!!)  
This weekend when the heat hit I tried something new and it was certainly a HIT by everyone.  In fact, we will be putting this on the weekly list I think.  Yum! 
Chicken Caesar Salad Pocket

Chicken Caesar Salad Pocket #Recipe.  Crock Pot Chicken Caesar Salad Recipe
Ingredients:  
2-3 large chicken breasts
head of Romaine lettuce
1 cup of your favorite Caesar Dressing
1 Avocado
1 1/2 cup Parmesan Cheese, shredded
1/2 cup chopped fresh parsley
Croutons
Pepper to taste
2 cups of water

Directions:
1.  Place the thawed chicken breasts into a Crock Pot with 2 cups of water.  
2.  Add Pepper to taste.

3.  Set Crock Pot to medium – cook chicken for 4-6 hours.

4.  After the 4-6 hours.  Remove the chicken using a slotted spoon. 
5. Shred the chicken with a fork and knife on a separate plate.
6.  Dump the water out of the crock pot.  Once the chicken is shredded add it back into the empty Crock Pot.

7.  Add the Caesar Dressing, Parmesan Cheese, and parsley to the chicken.  Mix well.  
8.  Heat mixture on High for 30 minutes.

9.  Once the mixture is warmed and the cheese is melted build the Chicken Caesar Salad Pockets.  
10.  Stuff the pockets with Chicken, Romaine Lettuce, Avocado, extra Parmesan Cheese and Croutons!  
ENJOY!!

    Oh wow…I never would have thought to make Chicken Caesar in a crock pot. I bet it tastes amazing.

    This looks good. I love that you can just throw the meat in the crockpot. I'll definitely be trying this out this summer 🙂
