Summertime brings summer picnics, dinners on the deck and family BBQs which means it is time to think about new, creative yet easy summer recipes to bring to these get-togethers! You should know by now I am all about cooking and baking as long as it is means using an easy, quick and yummy recipe! In preparation for our mini family reunion I have been wanting to find some large party side dishes and salads. I started thinking about what my guests enjoy and decided to create a recipe with tomatoes.
Caprese Pasta Salad Recipe

Ingredients:
2 cups {dry} of pasta (I used farfalle)
1/4 cup chopped black olives
1/2 cup minced/chopped fresh basil
1 cup fresh mozzarella – cubed
1/4 cup chopped black olives
1/2 cup minced/chopped fresh basil
1 cup fresh mozzarella – cubed
1 can of Hunt’s Diced Tomatoes
1/4 cup Olive Oil
1/4 cup Olive Oil
I have already said it but I will say it again, I like easy recipes. Thankfully with Hunt’s Tomatoes using a unique flashsteam peeling method they are doing all of the hard prep for this recipe for me! I always pick up Hunt’s tomato products because I know the are the best canned tomatoes, and the best nutritional value of tomatoes! The hardest part of this recipe is preparing all of the other ingredients for the salad and even those jobs do not take long. Hunt’s tomato products are more than just pizza sauce and spaghetti toppings. Think of the time you could save in the kitchen thanks to Hunt’s when wanting some easy cooking!
Directions:
1. Prepare the pasta as directed on the pasta package. Once the pasta is cooked, run cold water on the pasta. Let the pasta completely cool. This is a cold salad. You do not want your Mozzarella melting!
2. When the pasta is cooling, start preparing the rest of your salad ingredients.
3. Chop the black olives into small pieces.
4. Mince the fresh basil. I love this part! Smells so great!
5. Cube the fresh mozzarella into bite size pieces.
6. Now that the pasta is cold, add the pasta into a large mixing bowl. Add the olives, basil, and mozzarella.
7. Drain the Hunt’s Diced Tomatoes. Once drained, add to the bowl.
8. Mix the pasta well. Since the tomatoes add some natural moisture you do not need much olive oil. Once mixed well, add the olive oil for taste. Do not over do the oil!
9. Serve cold! Enjoy!
I cannot wait to bring this Caprese Pasta Salad to our family reunion party. I know it will be a hit and I also cannot wait to tell our guests that it took less than 30 minutes to prepare! Hunt’s Diced Tomatoes for the win!!
