Well friends, it should not be a surprise to any of you, I love wine. But I especially love cooking with wine. Now doing this can get expensive but I found the perfect high quality wine for drinking but also the perfect price tag for cooking with. Introducing CK Mondavi!
CK Mondavi is the only American made/grown wine in the “Supermarket wine under $10” category. Yes, ten dollars! Some of you might think that cheap wine is just that…cheap. Not true with CK Mondavi. This wine is a great addition to your wine cellar that will not break your bank but will satisfy your wine taste-buds.
I decided to get creative in the kitchen with some of my CK Mondavi wine – okay not too creative but let’s face it, Crock Pot meals are the BEST!! Add some wine and the dish becomes a master piece!
Crock Pot Italian Chicken Chardonnay

For this recipe I used the CK Mondavi Chardonnay. The Chardonnay is medium bodied with a hint of oak, Aromas of lemon and citrus combined with flavors of apple and pear lead to a delightfully crisp finish. While I am not usually a Chardonnay drinker I found this wine to be a great drink along with our chicken and pastas dish. Not to mention, using it in the recipe was perfect as well.
Ingredients:
2 teaspoons paprika
1/4 teaspoon cayenne pepper
salt and pepper to taste
3-4 chicken breasts, boneless, skinless
1 medium orange sweet pepper, chopped
1 medium onion, chopped
1 1/2 cups CK Mondavi Chardonnay
6 ounces tomato paste
3 TBSP Garlic Powder
2 teaspoons dried thyme
1/4 cup minced fresh parsley
Pasta, cooked
Shredded Romano cheese
Directions:
1. Place chicken breasts into Crock Pot. Combine the paprika, salt, pepper, and cayenne and sprinkle over the chicken.
2. Place the chopped pepper and onion into the Crock Pot.
3. In a small bowl combine the chardonnay, tomato paste garlic, and thyme. Mix well. Pour mixture over chicken and vegetables.
4. Cook on low for 5-6 hours. Once cooked, stir in parsley.
5. Prepare pasta of your choice. Serve chicken, sauce and veggies over warm pasta. Sprinkle with Romano cheese.
6. Enjoy!!

I remember my mom used to cook crock pot dishes when I was young. I wasn't sure if she'd add wine in the meals but I am certain she wasn't. It wouldn't be appropriate. 🙂 I am really intrigued with cooking with wine. I haven't eaten any dishes with wine on them yet but I would like to try.
