Meal planning and cooking is sometimes the easiest part of making sure your family has warm home-cooked meals most evenings. The hardest part? Finding the funds to make those yummy home-cooked meals. As most of you know, due to Jeremy’s multiple surgeries and hospital stays last year we racked up some hefty medical bills which means there are times of the month that we are feeling the crunch in our checkbook. Times are tough but the bottom line is that I have a job to make sure my family has dinner on the table every night. To do this I started really focusing on what I was buying and creating when writing our meal plans for the week. In doing so, I have started to come up with some great budget friendly meals and simple dinners.
I have also learned to start shopping for deals. For example, at Walmart right now there are 14 Kraft items on Rollback that I promise you can make some yummy low budget meals for your dinner table. This is a great time to stock up on these items and use them for some casserole dishes or sides. Recently, I decided to try a new recipe that I considered a One Dish Meal. I love One Dish Meals because they are usually simple dinners for our family. Not to mention there are always perfect leftovers for Jeremy to take to work!
