You guys – summer is coming to an end…fast. We are bummed that the summer has escaped us but also super excited for Jude to head back to preschool. Last weekend we headed to the store to get new school clothes, backpack, shoes and school supplies and we totally feel like we are set for the new school year. After we got home and unloaded our loot I started thinking about that hungry growing boy that will be coming home from school wanting some yummy snacks to keep him full until dinner. Goodness…I needed to think of something quick and easy that I knew the entire family would enjoy.

When I started thinking about these snack ideas I wanted something that could make a large portion of so we could use it for a whole week of snacks. I really like thinking of snack recipes for the family because I want these snacks to not only be yummy but a better-for-you snack. When thinking of a snack I thought back to our traditional family picnics and boom Frog Eye Salad popped into my head. Yes, Frog Eye Salad. Believe me you will want to get past the name of this recipe and dive right into it.

Ingredients:

3/4 cup sugar                                            
1 Tbsp. flour
1/2 tsp. salt
2/3 cup pineapple juice
1 egg, beaten
1 tsp lemon juice
1 cup Acini De pepe (macaroni)
2 cans(11 oz)  mandarin oranges, drained
1 can (20 oz) chunk pineapple, drained
1 can (20oz) crushed pineapple, drained
1 carton (8 oz) Cool Whip
1 cup miniature marshmallows
Maraschino cherries for topping (optional)

Directions:

1.  In a small sauce pan, combine the sugar, flour and salt.  Stir in the pineapple juice and egg.  Cook over medium heat, stirring constantly until thickened.  Add lemon juice.  Set aside and cool. 
 
2.  Cook the Acini De pepe according to package directions and drain.

3.  Combine cooked Acini Di pepe with the cooked mixture in a large bowl.  
4.  Cover bowl with foil and place in refrigerator until chilled.  Usually takes about an hour.

5.  Once mixture is chilled combine the canned fruit with the Anci mixture and stir lightly.

6.  Next add the marshmallows and Cool Whip to the mixture.  Stir Well!   

7.  Chill at least 1 hour before serving.  Top with maraschino cherries if desired.   Enjoy!

Back to School is hectic but with quick and easy snacks like this yummy Frog Eye Salad will help us stay on track while we work our way through the school transition period.  The best part about this recipe is that it literally takes minutes to prepare.  Once your pasta is cooked it is smooth sailing and if you can’t tell from the photos it makes a LARGE batch of Frog Eye Salad.  Even though this is somewhat of a dessert I love that the kiddos love it because of the oranges and pineapple that are included in the salad.  Kids desserts do not usually include fruit so I chalk this up to a WIN for mom. 
People often ask how Frog Eye Salad showed up in my recipe book and I love telling the story.  Jeremy grew up eating Frog Eye Salad at every family gathering and when I went to my first family gathering I was freaked out when I heard the name of the recipe but since that first taste I have added it to our buffet table many times.  Like I said, it makes a large portion and with the addition of the fruit it can either be a dessert or a sweet fruit salad for the table.  Delicious recipes passed on to family makes them even better!

To make your own Frog Eye Salad you can stop at your local Walmart and pick up everything you need!  Don’t forget to clip that coupon for a dollar savings too!  Think of all the yummy snacks that you could make with the Jell-O pudding too!  Acini Di pepe pasta can sometimes be difficult to find but Walmart always has it!  Great find!
