You guys – summer is coming to an end…fast. We are bummed that the summer has escaped us but also super excited for Jude to head back to preschool. Last weekend we headed to the store to get new school clothes, backpack, shoes and school supplies and we totally feel like we are set for the new school year. After we got home and unloaded our loot I started thinking about that hungry growing boy that will be coming home from school wanting some yummy snacks to keep him full until dinner. Goodness…I needed to think of something quick and easy that I knew the entire family would enjoy.
When I started thinking about these snack ideas I wanted something that could make a large portion of so we could use it for a whole week of snacks. I really like thinking of snack recipes for the family because I want these snacks to not only be yummy but a better-for-you snack. When thinking of a snack I thought back to our traditional family picnics and boom Frog Eye Salad popped into my head. Yes, Frog Eye Salad. Believe me you will want to get past the name of this recipe and dive right into it.
Frog Eye Salad
1 Tbsp. flour
1/2 tsp. salt
2/3 cup pineapple juice
1 egg, beaten
1 tsp lemon juice
1 cup Acini De pepe (macaroni)
2 cans(11 oz) mandarin oranges, drained
1 can (20 oz) chunk pineapple, drained
1 can (20oz) crushed pineapple, drained
1 carton (8 oz) Cool Whip
1 cup miniature marshmallows
1. In a small sauce pan, combine the sugar, flour and salt. Stir in the pineapple juice and egg. Cook over medium heat, stirring constantly until thickened. Add lemon juice. Set aside and cool.
2. Cook the Acini De pepe according to package directions and drain.
7. Chill at least 1 hour before serving. Top with maraschino cherries if desired. Enjoy!
