Some foods just make my brain full of memories. Good memories, crazy memories, fun memories, bad memories and memories of people who have left this earth. One of those faces that comes to my head a lot when my family has some of the traditional foods and meals is my Grandma. She passed away when I was 16, it was heartbreaking. I still remember that day vividly. She was a woman that only showed love and respect to her family. She was also that woman that loved to cook a giant Sunday dinner for her family. Lucky us!!
Every Sunday we would go to my Grandma’s house for dinner and the Denver Bronco’s game. It was tradition. This meal was always home cooked and so good. She was a fantastic cook and baker. We always had a full meal and dessert – and we knew the dessert would be yummy because she always had to try it before she served it. Yes, this meant all of her desserts had a piece missing from it. Seriously, how cute is that!?!?! Good woman and man I wish she was around to see Jude and Teagan. I can hear her voice every time they wrestle in the living room before dinner; “Take it OUTSIDE!” She HATED when we rough housed in her living room! I mean HATE!!
Like I said, she prepared a big dinner every Sunday. Every meal consisted of some sort of fruit salad treat. She had her favorites and so did I. One of my very favorite fruit salad treat was her Pineapple and Cottage Cheese Treat. This was the perfect way for her to get the kids to get healthy cottage cheese by making it even more of a treat with the sweet pineapple.
Grandma’s Pineapple and Cottage Cheese Treat Recipe
Ingredients:
Pineapple Slices – drained
Daisy Low Fat Cottage Cheese 2%
Directions:
Place 2 slices of cold pineapple on each plate. Top the pineapple with Daisy Brand Cottage Cheese. I use about 1/2 cup for each plate. Enjoy!!
