Ingredients:
4 cups Rolled Oats
4 tsp Ground Cinnamon
2 tsp Pumpkin Pie Spice
1 cup sugar (I used my new favorite sweetener Monk Fruit In the Raw)
1/2 tsp salt
4 tsp Ground Cinnamon
2 tsp Pumpkin Pie Spice
1 cup sugar (I used my new favorite sweetener Monk Fruit In the Raw)
1/2 tsp salt
1 tsp Baking Powder
3/4 cup Pumpkin
1/2 cup unsweetened Applesauce
3 TBSP Sugar Free Maple Syrup
White chocolate chips
Directions:
1. Preheat oven to 325 degrees. Line a baking sheet with parchment paper. Spray the parchment paper with cooking spray.
2. Combine all the dry ingredients, except the chocolate chips, into one large mixing bowl. Mix well.
3. In a second mixing bowl combine all of the wet ingredients. Mix well.
4. Slowly stir in the wet ingredients into the dry ingredients using a spatula. Stir until everything is well combined and the oats are coated with wet ingredients.
5. Spread all of the granola onto the baking sheet evenly. Bake for 20 minutes. Stir and break up the granola. Bake for another 15-20 minutes.
6. Let the granola cool completely and then add the White Chocolate Chips. Enjoy the granola on its own or add to yogurt, make a smoothie or even eat with milk! Delicious!!
I am loving this granola. But the kids love it even more. There are great health benefits to the sweet treat too and it is a great on the go snack for all ages! I am actually thinking of making some of this for teacher gifts for Christmas! AND this is a Nut Free Granola! Great nut free snack idea people!!
