Have you started thinking about your Easter Brunch menu yet? We are heading to Arizona for Easter so my mother-in-law will be doing most of the cooking and prepping but she always lets me contribute when we visit on holidays. Even though we are on vacation my Easter brunch recipes have to be convenient and easy. Sure, we are on vacation but we still have a busy schedule! The crowd we are planning for could be quite large so we have to be prepared and ready to feed everyone. I love Easter Brunch because not only do we get the traditional breakfast items but also some special Springtime treats! One of the items that I will happily be sharing next month are these Springtime Mini Bundt Cakes. Everything is better in mini form in my mind – means you can have a couple right?
Springtime Mini Bundt Cakes

Ingredients:
Classic White Cake Mix (prepared as directed)
Classic White Frosting
Food Coloring, I used blue, purple, pink and yellow
NESTLÉ® TOLL HOUSE® Spring Chocolate Chip Morsels
Directions:
1. Preheat oven to 350 degrees. Prepare mini bundt pan with cooking spray.
2. Prepare cake as directed on box.
3. Separate prepared cake mix into four small bowls, leaving some white cake mix for use as well.
4. Using the food coloring create pastel cake mix, perfect springtime colors.
5. Spoon each color into the mini bundt cakes. There is no correct way to do this, make fun designs for extra fun.
6. Bake cakes for 15 minutes.
7. Let cool completely. Once cooled frost each bundt cake.
8. Top each cake with the yellow and pink NESTLÉ® TOLL HOUSE® Spring Chocolate Chip Morsels. Eat the brown ones while you are baking! Yum!
