Breakfast time in our house can be a little hectic and after getting the same answer from the kids when I would ask them what they wanted for breakfast (MUFFINS), I knew that had to start getting better and preparing breakfasts that were wholesome yet super easy to prepare. About a year ago I was introduced to muesli, honestly before then I had no idea what it was. Now that I am familiar with muesli I am finding that I can get pretty creative with it, especially when it comes to breakfast ideas for the kiddos. My favorite muesli is the Nature Valley Toasted Oats Muesli – it comes in original flavor which has coconut and cranberries or in a blueberry flavor. Both are amazing additions to recipes that can be transformed into some thing nourishing and full of goodness.
So, after hearing – MUFFINS – for the 100th time I decided nope – time for muesli to take control. I decided to trick my kiddos into thinking they were eating cookies for breakfast. Okay, not really, no tricks. But let me tell you, the trick was on me – these truly taste like cookies but are filled with so many great things that make me happy to serve them to my entire family for breakfast. Chocolate Cranberry Muesli Breakfast Cookies

Ingredients:
2 ripe bananas, mashed
1/4 cup nut butter
1/4 cup honey
2 cups Nature Valley Toasted Oats Muesli (either flavor)
1/2 cup mini chocolate chips
1 tsp vanilla
1/2 tsp salt
Directions:
1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
2. In a large mixing bowl, mash together the ripe bananas, honey and nut butter.
3. Whisk together until mixture is smooth.
4. Stir in the muesli, chocolate chips, vanilla and salt until evenly combined.
5. Place about 2 TBSP of the cookie mixture into rounded mounds onto the baking sheet. Leave about 2 inches between each cookie.
6. Bake for 10 minutes at 350 degrees. After 10 minutes take baking sheet out of the oven and slightly press down on each cookie with a spatula to flatten out cookies.
7. Once each cookie is flattened, place back into 350 degree oven for another 10 minutes.
8. Once baked, remove from oven and let cookies completely cool before serving.
9. These cookies can be stored in a freezer safe container and frozen to enjoy at a later date.
Yum! These are the easiest things to make and because you can get about 15 cookies out of each batch you can easily do this recipe and then freeze a number of cookies for future meals. Easy! Love that. Also, because these cookies do bake up crispy on the edges they are perfect for on the go breakfasts! We all have those mornings right? Eat on the way to school please!!
