I was hoping that once we got back into the school swing of things we would be able to have home-cooked meals on the table every evening but boy I was wrong. As the kids get older, I am finding that preparing dinner meals is getting harder. Between Taekwondo, dance and T-ball and other school activities the dinner plans get pushed aside. That was until I found our new favorite dinner meal that I can prepare in about 30 minutes! Barber Foods Breaded Stuffed Chicken Breasts are not only delicious but totally kid approved!

Now, I have made my own stuffed chicken before but it is one of those meals that does take a lot of time in the kitchen and I just do not have that time anymore. Thankfully for families like ours we have this option of enjoying the great meal of stuffed chicken but not have to find that kitchen time in our schedule. I really enjoy being able to run to the freezer and get these chicken breasts and place a hot meal on the dinner table even after a long day at the office and a visit to Taekwondo.
The last time I made these delicious chicken breasts I decided to make an easy side dish that I knew would compliment the chicken well and be a hit with the whole family as well.
Lemon Orzo Salad with Asparagus and Tomatoes

Ingredients:
6 ounces orzo – cooked per directions
10 asparagus spears, chopped
1 TBSP Olive Oil
2 TBSP mince garlic
15 grape tomatoes, sliced in half
Juice from one lemon
Parmesan cheese, shredded
Salt and Pepper to taste
Directions:
1. Prepare Orzo as directed on package. Add chopped asparagus to the boiling water and orzo for about 3 minutes.
2. In a skillet add olive oil and garlic and simmer for 2 minutes.
3. Add cooked Orzo and asparagus into the skillet, mix well in the oil and garlic.
4. Toss in tomatoes and lemon juice. Mix well.
5. Salt and pepper to taste and mix until well combined.
6. When ready to serve, top with Parmesan cheese. Enjoy warm!
To make this broccoli and cheese stuffed chicken breast perfect you will need to cook the chicken until it has an internal temperature of 165 degrees and follow the cooking instructions on the box. Not only does this make the insides nice and gooey but makes sure your chicken is safe to eat.
