What’s for lunch mommy?

Weekends are full of questions but the lunch question can sometimes be hard to answer. Once we find something for the picky kids to enjoy I am often left standing in front of the pantry looking for lunch for me long after the kids are done eating.

I have decided that the question has to be easier to answer when lunchtime comes around so I have started buying some of the lunch perfect Campbell’s® Homestyle Light Soup.  I am not kidding when I am saying this – these Homestyle soups really do taste like homemade soup!  My favorite so far has been the Baked Potato with Bacon & Cheddar – how is this a LIGHT soup???  Nom!  Campbell’s knows the mom struggle and has a number of new products for us all to enjoy. Learn more about Campbell’s new products here.

After enjoying this lunch I decided that I had to find a perfect side dish to enjoy my soup with.  But that side dish had to be easy to make and delicious.
