I don’t know why but I struggle with preparing my own lunches on the weekends and days off.  I like to step away from my go-to frozen meals that I take every day to work and enjoy something fresh but the challenge is finding that perfect lunchtime recipe that doesn’t take a ton of time to prepare.

I started thinking about what I enjoyed as a kid on those lunchtimes with my mom and immediately tuna salad sandwiches popped into my head.  But I wanted to add a little twist to that traditional sandwich recipe and came up with something that is now my favorite lunchtime meal to enjoy at home. 

Apple Slices Topped with Cranberry Walnut Tuna Salad

Ingredients:

1/2 cup mayonnaise
1/4 cup crushed walnuts 

1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/4 cup chopped onion
1 can (5 ounces) tuna, drained
1/2 cup Craisins® Dried Cranberries
1 apple, sliced – I use Gala apples
Romaine lettuce

Directions:
1.  Combine walnuts, salt, pepper, garlic powder, onions, tuna, and Craisins®  in a medium bowl.

2.  Add mayonnaise and carefully mix together into a nice tuna salad mixture.

3.  Slice apple into “circles”.  I can get about 5 sliders out of each apple.

4.  Top apples with a good amount of the Cranberry Walnut Tuna Salad.

5.  Place apple slices topped with the tuna salad on a bed of romaine lettuce.  
5.  Enjoy immediately or keep refrigerated until ready to eat.

I am sure you can see why this has recently become a favorite lunchtime meal of mine.  The tuna salad is so delicious on it’s own but when I decided to add the Craisins® it made this recipe so much better.  I love baking with Craisins® so when I saw the bag of them on my counter I knew I had to try it in the salad.  Craisins® are known for their zing of flavor which is why they are the perfect asset to baking and cooking.  
This time of the year everyone is focused on their food intake, a simple yet wholesome lunch like this is a perfect way to start the new year off right. By simply adding 1/4 cup of Craisins® Dried Cranberries to my tuna salad I am adding 1/2 cup serving of fruit!

Ocean Spray knows my lifestyle too.  I found these super yummy Craisins® Fruit Clusters that now have a space in my work desk.  The cranberry almond clusters are so good, I do not feel like I am eating something wholesome and packed with fruit.  If you are looking for a great work snack or on the go snack make sure you add these clusters to your shopping list.

Craisins® Dried Cranberries and Craisins® Fruit Clusters can be found in the dried fruit section in Walmart in several package sizes and flavors. I haven’t tasted the Craisins® Dried Cranberries in blueberry flavor yet but the next time I go shopping that is the bag I will be picking up!

    This looks interesting! I'm totally game giving it a go but the kids might be hard pressed to give it a try. Crunchy and sweet is always a great combination.

    These look SO good!! I think my son would love these too. Craisins are one of my favorite snacks. I typically just eat them by the handful but I need to start cooking with them more.

    This would be a great idea for a party or pot luck lunch. I love tuna fish and apples so this is something I'll give a try!

    A simple tuna sandwich is my absolute favorite lunch. I never would have thought to add Craisins and put it on an apple, though that's a great idea! I'll have to try it!
