If you have been around here long you know that I have found a new love of cooking and baking for my family but all of my recipes must be easy, quick and family friendly. Now, the biggest challenge is finding those recipes but with the help of Minute® Rice I am always able to create something tasty. My favorite item to have on hand is Minute® Whole Grain Brown Rice. Just like all Minute® Rice, the whole grain brown rice is quick and easy to prepare and is a great pantry staple. My entire family loves when I prepare a meal with rice, but especially brown rice. If you like the rich flavor of brown rice, Minute® Whole Grain Brown Rice is a tasty, nutritious option, and it has similar nutritional values as regular long cooking brown rice, but is ready in just 10 minutes!!  Remember how I said I need my recipes to be easy?  This is why I use Minute® Rice!  

One Pot Cilantro Lime Chicken, Rice & Black Beans, one dish meals, Chicken and Rice recipes, on pan meals, Cilantro Lime Chicken, Rice & Black Beans

Ingredients:

1 pound chicken breasts – diced
1 TBSP oil
1/2 cup white onion – diced
2 cloves garlic – minced
1 1/2 cups chicken broth
4 ounce can chopped green chilies
juice from 2 fresh limes
1 can black beans, rinsed and well drained
2 cups Minute® Whole Grain Brown Rice
1/3 cup chopped cilantro
Salt and Pepper – to taste

Directions:  
1.  In a large skillet, cook chicken breast with oil until completely cooked through.  Season with salt and pepper while cooking. 
2.   Once chicken is cooked, add onion and garlic.  Let cook for another couple of minutes. 
3.  Carefully stir in broth, green chilies, lime juice and black beans.  
4.  Bring mixture to a boil.

5.  Once boiling, add Minute® Whole Grain Brown Rice making sure to completely submerge rice and let boil for 2 minutes.  
6.  Then remove from direct heat and cover with lid for 6-7 minutes.  
7.  Once rested, fluff up rice and top with chopped cilantro and a few slices of lime for flavor and garnish. 
8.  Serve hot with some warm corn tortillas.  Enjoy!

Minute® Rice makes this meal hearty and perfect for any busy family like ours.  We come home after a long day at work and pick up our favorite Minute® Rice and get cooking!  I guarantee this will be a recipe that your entire family will be asking for over and over again.  A lot of the time, my kids pick up on the healthier options and decide they do not like them.  With the whole grains from the rice and protein from the beans and chicken I have my kiddos fooled!  HA!!  Mom for the win!!

    This is gorgeous. I love one pot dishes. I just tried my first one recently.
    Although my family is full of cilantro haters! Must be generic. We can still use the rest, though, and maybe substitute avocados. Or parsley?

    I love one pot dishes and the ingredients in this one definitely appeal to me! I never used to care for cilantro but have come to really appreciate it in the last year or so! I think we'll try it!

    I'm a huge fan of one pot recipes. Its such a time saver. And, brown rice is very healthy compared to white. I am going to try your recipe without the chicken!

    I'm a sucker for a one pot meal of any type. This seems so much better than Rice A Roni though. I prefer brown rice to white rice!
