My family is quickly introducing me to the world of seafood, honestly, growing up my parents never had fish on their meal plans so this is all new to me but I am really enjoying it. Jeremy and the kids love all things seafood but I have never really been comfortable with preparing a meal of fish, always afraid of making people sick! But now that I have my freezer full of the New Gorton’s Gourmet Fillets I am confident in my cooking and the family is loving the delicious fish.

They are available in Parmesan Crusted Cod, Pub-Style Beer Batter Cod, Tuscan Garlic & Herb Tilapia, and Signature Seasoned Salmon. All four chef-inspired varieties of these extra-large fillets are made with real ingredients like roasted garlic, Parmesan, butter and oregano and have no artificial flavors or MSG.
We love the Parmesan Crusted Cod and Pub-Style Beer Batter Cod. They are so flavorful and you can tell that the fish used is high quality and great seafood selections. Also, for this busy mom they are so easy to prepare. I simply preheat the oven and bake them for about 30 minutes. Easy and family approved! A winner in my cook book!
The main part of our meals are easy when we know we are having some Gorton’s Gourmet Fillets but I was finding it hard to come up with great side dishes that would please the crowd too. Recently, I went to the store to get some vegetables for our dinner and saw the fresh spring asparagus and got an idea for a side dish.
Creamy Cheesy Asparagus Rice

Ingredients:
2 TBSP olive oil
1 medium onion – diced
2 bunches of asparagus – trimmed into 1 inch pieces
1 1/2 cup brown rice
2 cloves garlic – crushed
3 cups chicken broth
1/2 cup half and half
1 cup Parmesan cheese, shredded
2 TBSP butter
salt and pepper to taste
Directions:
1. In a large skillet, heat olive oil and onions over medium heat. Onions should be translucent when done. 2-3 minutes
2. Add rice to onions and oil. Let rice brown a little.
3. Add garlic and cook for another couple of minutes.
4. Add chicken broth to the rice and stir and cover. Turn heat down to low/medium and cook for about 10 minutes.
5. Add asparagus pieces to rice mixture. Cover and continue cooking until all of the liquid is absorbed and the rices is tender, should take another 10 minutes.
6. Turn heat to low and add butter, half and half and cheese. Stir constantly until the cheese is melted and mixed completely.
7. Remove from heat and add salt and pepper for taste. Serve immediately. You can also add some Parmesan cheese for extra cheesiness! Enjoy!!
While I made the Creamy Cheesy Asparagus Rice side dish I was able to pop the cod into the oven and once it was baked our rice dish was done too! I love meals like that. Not much prep and not much work. I also love the fact that my kids are enjoying fish and teaching me to incorporate it into our diet and meal plan.

I love asparagus and cheese, so I'd probably like this! We buy Gorton's fish pretty frequently of one kind or another. I don't think I've had the parmesan crusted version, but it looks quite tasty.

I cook with these ingredients all the time yet I've never thought to add cheese to my asparagus risotto. I've actually never bought premade breaded fish but I have to say that this one looks so crispy!!
