December is always a rough month for me when it comes to sugar and sweets. It is always hard for me to say NO! But now that we are into the New Year, like most of everyone else we are thinking about cutting out sugar and getting back on track with our food intake. 

 
The hardest meal for me to really say no to the sugar is Breakfast. Pastries, lattes and breakfast breads are my crutch! To battle this I decided to start baking and preparing some yummy breads and muffins on the weekends to have on hand for my work day breakfasts but instead of using sugar I started using Truvia® Baking Blend. Truvia®, America’s #1 Stevia Sweetener, is also a reduced calorie option – now that is a great way to get baking in the new year!

Carrot Apple Bread

Ingredients:

1 egg
1/4 cup light brown sugar
1/3 cup oil
1/4 cup Truvia® Baking Blend
1/4 cup Greek Yogurt, plain
2 tsp vanilla extract
2 tsp cinnamon
1 tsp ground nutmeg
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup grated carrots – I used 2 medium carrots
1 cup grated apples – I used 2 medium peeled honey crisp apples

Directions:

1.  Preheat oven to 350 degrees and prepare a 9×5 loaf pan with cooking spray and flour. 

 
2.  In a large mixing bowl, using a whisk combine the egg, brown sugar, oil, Truvia® Baking Blend, Greek Yogurt, vanilla, cinnamon, and nutmeg. Mixture is a bit sticky but that is normal.

3.  Add flour, baking powder, baking soda, and salt to the mixing bowl.  Fold ingredients together until combined, making sure to not over mix.

4.  Add carrots and apples and fold in with mixture just until combined.  Bread batter will be very thick.

5.  Pour batter into prepared pan.

6.  Bake bread at 350 degrees for 45-50 minutes or until bread is golden brown.  Test bread with a tooth pick to make sure it baked through.

7.  Allow bread to cool completely before turning it out onto a wire rack or plate.  
 
8.  Slice and enjoy!

This bread is amazing.  Not only is it just sweet enough for a breakfast treat but it contains carrots and apples.  A great bread to start your morning off right.  My kids really like it too.  Bonus!!  I have made the switch to Truvia® Natural Sweetener because it works great in all of my baking, cooking and even our smoothies.  It is the natural sweetener choice for people looking to reduce calories, including people with diabetes and those looking to reduce sugar in their diets.  This is us!  Look, we cannot go with out sweets but we can be smarter about them in our diets.

    I have a hard time cutting out sugar at breakfast too, and I sure would love a slice of this bread – with half the sugar! It sounds fantastic with the carrots, apples and yogurt in there and I love how you cut down on the quantity of brown sugar by adding in Truvia's Baking Blend! #client

    I am always for cutting out sugar. This looks and sounds amazing! I'm not a huge carrot fan but I have to say, I'd be willing to give this a try for sure!! I think I shall book mark and save for later <3

    It has taken me quite some time to admit that while I don't eat a lot of sugar, I definitely have a sugar addiction. I'm hoping to try and tackle that this year. This Carrot Apple Bread looks amazing!
