December is always a rough month for me when it comes to sugar and sweets. It is always hard for me to say NO! But now that we are into the New Year, like most of everyone else we are thinking about cutting out sugar and getting back on track with our food intake.
Carrot Apple Bread
1/4 cup light brown sugar
1/3 cup oil
1/4 cup Truvia® Baking Blend
1/4 cup Greek Yogurt, plain
2 tsp vanilla extract
2 tsp cinnamon
1 tsp ground nutmeg
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup grated carrots – I used 2 medium carrots
1 cup grated apples – I used 2 medium peeled honey crisp apples
1. Preheat oven to 350 degrees and prepare a 9×5 loaf pan with cooking spray and flour.
You will find a number of different types of Truvia® Natural Sweetener in the baking aisle of your local King Soopers store. I use the Truvia® Baking Blend for my baking needs but also have the Truvia® Natural Sweetener Spoonable on hand for my smoothies and coffee.
