Hard to believe that Mother’s Day is just around the corner. I don’t think I truly valued the meaning of Mother’s Day until I was a mother myself. Moms obviously deserve more than one day in honor of the blood, sweat, love and tears they pour into the lives of their families and most people do honor their mom every day. But on that ONE day that we all celebrate our moms we must make it so special.
I adore this old picture of my mom and I when I was just brand new. The smile on her face is the same smile I see when she takes care of my kids. My mom is the best mother and grandmother a family could ever ask for. So caring and devoted to her family. She isn’t all about the fuss and absolutely hates when the spotlight is on her…sorry mom! For Mother’s Day we often go to dinner so she doesn’t have to cook, but maybe we need to change up our traditions a bit? My mom and I both LOVE breakfast foods; they’re our favorite. Instead of heading out for dinner, how about creating a few yummy but super easy brunch recipes that would be perfect for any Mother’s Day celebration?
French toast is always a staple when it comes to brunch, but for this special event I felt like getting a little creative and sweetened up our recipe a little bit. Instead of French bread I used pound cake! Yes, pound cake and you know what? I might never enjoy French toast any other way.
Vanilla Pound Cake French Toast

Ingredients:
Sara Lee® All Butter Pound Cake, 16oz – thawed and sliced
6 eggs
1 cup milk
3 tbsp vanilla
2 tbsp cinnamon
Strawberries – sliced
Whipped Cream
Directions:
1. Prepare pound cake by slicing into 12 slices.
2. In a medium mixing bowl combine eggs, milk, vanilla, and cinnamon. Whisk together carefully until completely combined.
3. Prepare a skillet on the stove at medium heat.
4. Dip each piece of pound cake into the egg mixture, making sure to coat the pound cake completely on both sides.
5. Place on skillet and let it cook thoroughly.
6. Each side should cook for at least 4 minutes or until golden brown.
7. Serve warm and topped with whipped cream and strawberries. In my opinion, no syrup is needed!
This recipe makes a good amount of French toast and it does reheat pretty well so it really is a great brunch recipe that would feed a crowd. Moms shouldn’t be slaving away in the kitchen on Mother’s Day so it is important to find great recipes that can either be reheated, prepared ahead of time, or are super easy to prepare on the day of the celebration.
Since I found a great sweet brunch recipe I knew I needed to focus at least one recipe on eggs. Eggs are also a staple at brunch. Again, I needed a recipe that was easy and something I could prepare ahead of the celebration.
These protein packed egg frittatas are simply amazing. The recipe I am sharing is the base that we like to use but it can be switched up with some extra veggies, different cheeses or other meat options.
Egg and Cheese Frittatas

Ingredients:
10 eggs
1 cup onion – diced
Jimmy Dean Regular Premium Pork Sausage – cooked
1 cup shredded cheddar cheese
1 tsp garlic powder
1 tsp black pepper
Other fillings: green peppers, tomatoes, spinach, bacon, etc.
Directions:
1. Preheat oven to 350 degrees.
2. Prepare a large muffin tin with cooking spray.
3. Brown sausage in a large skillet until completely cooked.
4. Add diced onion to skillet and cook with sausage until onions are translucent.
5. While cooking, add garlic powder and pepper to the sausage mixture.
6. In a medium mixing bowl combine eggs and cheese and whisk together until completely combined.
7. Place 2 tablespoons of sausage mixture into each muffin cup.
8. Pour cheese and egg mixture over sausage, do not overfill.
9. Cook for 25 minutes at 350 degrees.
10. Once cooked, the frittatas should pop out of each muffin cup easily, if they are stuck, use a knife to run along the edges to help.
11. Eat warm or store in an airtight container and keep refrigerated until ready to enjoy. These should last for up to 5 days. Reheat when ready to serve.
A perfect Mother’s Day brunch if you ask me! Sweet French toast and savory frittatas. Both of these recipes are easy recipes that will have Mom asking you for seconds!

The mugs in your photos are the first things that caught my eye! They are so cute. Your recipes and brunch ideas look fabulous. I did a Mother's Day brunch for our moms the first year my husband and I were married, and it was a great time of memories.

These are beautiful ideas to make a special Mother's Day brunch. I love the food you made. I always make those little egg quiche cups too. They're convenient, tasty and everyone loves them. It's so important to cherish mom on Mother's Day and every other day of the year.

I often make similar egg frittatas, although I use bacon and lots of veggies in mine. The pound cake french toast looks indulgent and delicious.

Omg I'm going with the Vanilla Pound cake my Mother is German so she's somewhat hard to please when it comes to sweets as she us used to all the pastries. I do know she will like this so you solved a problem for me and even I can make it. Lol thank you
