One of the best things about this time of the year are the BBQs, parties and gatherings outside. It is a great time for visiting, playing and eating! I love summertime BBQs because it gives me inspiration to try new easy-to-share side dish recipes to go along with any of our grilled main dishes.
Just like all of my favorite recipes, my new favorite side dish is one that is made easier with the help of some packaged ingredients. This Cold Corn Salad is a great creamy salad side dish that your guests will love. A perfect pairing to any grilled dish.
Cold Corn Salad

Ingredients:
2 cans yellow corn
1/2 red onion, diced
1 1/2 cups shredded cheddar cheese
1 cup mayo
2 cups corn chips
Directions:
1. In a large bowl, combine all of the ingredients listed except for the corn chips.
2. Carefully mix all ingredients together and make sure the mayo covers the ingredients evenly.
3. Place corn salad in the refrigerator for at least 1 hour before serving. Best if served chilled.
4. Right before serving, mix in the corn chips.
5. Most people like the crunch so you can serve this salad with a side of extra chips for dipping if desired.
6. Enjoy chilled!
This type of salad is great for BBQs and holiday celebrations. Super easy to prepare ahead of time and this particular recipe makes a LARGE bowlful. The addition of the RO*TEL® gives this traditional BBQ side dish a little kick. You could, of course, use the spicier version as well but my family isn’t too big on spice.

When we get together as a family for Saturday or Sunday dinner, I'm usually tasked with making baked beans, a staple in our summer get togethers. I've been getting burned out on making it. I've been toying with optional ideas on something different, and your Cold Corn Salad sounds like that something different that the family would like. Thank you for posting this great recipe!
I would totally eat that, and I am a picky eater! I love corn, though. I've had corn salsa before, but never a corn salad quite like that. It's such a perfect side dish for BBQ season!
Now BBQ-ing during the summer is all we do. This is a perfect side dish for any meal, my daughter is having her graduation party in a few weeks and I am going to create this. Looks so tasty and we love corn!
I will be totally honest, but I have never heard of using corn chips in this way. We usually make a cheese dip to eat them with, so this recipe is unique. It does look like something some of my southern friends would like at potlucks and such. I will have to give it a try.
This reminds me so much of a salad our neighbor brought to church potlucks when I was a kid. I'm sure if I looked in my mom's church cookbook from back in the day, her recipe would be in it. It was one of those sides that was best with freshly picked sweet corn. Colorful, delicious, and the perfect summer side. No wonder there were never any left-overs!

What a fun and tasty recipe, this would make a great side at any cookout this summer break. I never had any kind of corn salad before, but this alone made me really hungry. We try to do cookouts as often as we can during summer break when the kids are here.
