I have said it a lot lately but I really enjoy summertime. Sure the heat gets to me and I hate sweating but the months of July and August are probably two of my favorite months. There’s so much to enjoy with family and friends and of course, great opportunities for some yummy food tasting!
I have always enjoyed bringing desserts to parties because I am not one that brings just a traditional pie or cake. I like to get creative but within my time limits…because no one has the whole day to spend in the kitchen!! As the summer heat comes on HOT, when I think of a great summer dessert I think of something cold. A traditional Icebox pie is great for large gatherings because you can make a double batch with no extra effort, plus icebox pies are super easy to make!
During one of our busy weekends of gatherings I decided to make a special Icebox pie using our favorite pop, Dr Pepper®. I created a Dr Pepper Cherry Chocolate Icebox Pie. This pie was a hit with everyone!!
Over the years I have tried a number of recipes using Dr Pepper and all of them have turned out to be so delicious. We drink a lot of Dr Pepper in our family so maybe that is why I also enjoy cooking and baking with it as well. When I went to the store to get my ingredients for my Icebox Pie creation I made sure I got a few more cases of Dr Pepper. When I saw the limited edition “Pick Your Pepper” labels I decided to buy even more than I had planned. These labels are so much fun!!
Dr Pepper Cherry Chocolate Icebox Pie

Ingredients:
(makes 2 pies)
2 pre-made chocolate pie crusts
1 can Dr Pepper
12 ounces condensed milk
12 ounces whipped topping
1 large can of cherry pie filling
Directions:
1. Place all whipped topping into a large mixing bowl.
2. Slowly add the Dr Pepper to the whipped topping and combine carefully. Tip – do not add the pop all at once, add a little at a time and stir as you go.
3. Pour condensed milk into mixing bowl and combine with whipped topping and Dr Pepper.
4. Add in cherry pie filling but do not over stir.
5. Using a large spoon, fill each pie crust with the Dr Pepper Cherry filling.
6. Place pies into freezer overnight.
7. After frozen, slice and serve immediately. You can enjoy with a little extra chocolate topping or even some extra whipped topping.
Icebox pies are so good. The creaminess of the whipped topping makes it a refreshing treat. I loved the addition of the cherry pie filling, it really gave the pie a little extra because of the frozen cherries. I also think that the idea of Dr Pepper whipped topping is amazing! Honestly, I might find another dessert to just have that on top of…maybe a brownie?? YUM!

How fun is that?! I have never been a fan of soda, but Dr. Pepper is the only one I like/love. These cans are awesome. My parents always make sure they have some for me at home. And the recipe looks so good! I love that it's versatile. Now I need to go get some for this creamy goodness!

Wow this is an interesting treat. Who would of thought you could make a pie out of Dr.Pepper. Since its an icebox pie this could be an interesting pie for the summer.
I love the flavor of Dr. Pepper and of course I love cherries. This icebox pie sounds like a perfect summer treat. It also reminds me of all those type of desserts my Mom made in the 60's. Nostalgic, tasty and fun!
Wow, never ever would have thought to create a pie using Dr.Pepper soda, this looks so delicious. Must give this a try for our summer picnic next week.
I have to same I'm perplexed! I never would have thought of adding Dr.Pepper to a dessert! Having said that, I used to love Dr.Pepper (I don't drink sodas any more) so I can imagine the sweet flavour it would give to this pie.
