Goodness it has been a hot summer here in Colorado.  Hitting almost 100 degrees every day for the last few weeks.  That is hot for us!  Lucky for us, the way our house sits on our property means around dinnertime the sun move to the front yard so our backyard is perfect for playing, grilling and eating.
If you are like me, when it is this hot you are not wanting to turn on the stove or oven so grilling is the best way to prepare dinner.  That being said, there is only so much grilled chicken my family can handle so last week I decided to get a bit creative with a family favorite.  We eat a lot of Kabobs, mostly chicken and steak.  Last week I surprised the kids with something tasty!

Eckrich Smoked Sausage and Veggie Kabobs

Ingredients:
 
Eckrich Smoked Sausage – Cheddar links
Fresh pineapple – cubed
White onion – chunked
Red, Yellow and Red bell peppers – chunked
Optional – Tomatoes and Mushrooms
Skewers
Rice

Directions:
1.  Prepare grill and preheat.
2.  Cut the Eckrich Smoked Sausage links into 1-2 inch sections.
 3.  Prepare all of the fresh ingredients.

4.  Build the kabobs by alternating items on the skewers.

5.  Place each kabob on the grill and let cook for 8-10 minutes.  Turn the kabobs a few times through out the cooking process.

6.  Once cooked throurghly, remove Eckrich Smoked Sausage and veggies from skewers and place on a serving dish.
7.  Serve Eckrich Smoked Sausage, pineapple and veggies over a bed of rice.  Enjoy!

We love this recipe for more than one reason.  It is filling, yet light, easy and kid friendly, and a frugal meal full of veggies and fruit but most of all, so full of flavor.  The Eckrich Smoked Sausage is a great protein to add to any grilling recipe for the summertime meals you are planning.  Our favorite is the Cheddar Smoked Sausage because the cheddar gives the smoked sausage a little extra kid friendly flavor.

While we prepare dinner on the grill, the kids get to enjoy the cooler backyard during the hot summer evenings.  We especially love that they are able to run out some of their energy before dinner so we can have a pleasant family meal on the deck.

    These look amazing!! My sister-in-law and I were just talking about how good kabobs sounded! I really love the sausage and pepper combo, but I love the addition of pineapple. Yum!!

    I hear you on the heat. It's been close to 100 here in Iowa the past couple of weeks as well. My husband got a new grill for Father's Day and has been doing all of our cooking as of late (heaven!) We've kabobs a couple of times now and they're always a favorite. They're quick, healthy, colorful, and delicious. I'm excited to give this one a try, sausage and veggies are staples in the fridge. Thanks for your easy and always yummy recipes! x

    I love kebabs! I'm a vegetarian so mine look bit different, but you really can't go wrong with whatever you choose! We recently sold our apartment that had two balconies on the outskirts of the city and bought one downtown that doesn't have a balcony (yet) and I've missed grilling out this summer. Of course in Denmark, it barely gets about 70 degrees, so it feels more like autumn than summer!

    These kabobs look so easy to make. There's definitely something really special about going out and playing in the yard while you smell some BBQ! Gotta love the Summer days! Thanks for sharing this! Easy enough to make, yet enough protein for everyone!

    I get not wanting to cook in the house when it's so hot. But sometimes I really don't want to cook by flames in the outdoors either when it's that hot. That does look like a lot of yummy goodness on all the grill. I am all about grilling smoked sausage.

    I recently get married and we are still adjusting with everything and yes, I confessed, I am new to cooking so we and my husband are trying a lot and experimenting especially when it comes to cooking. We do eat on different restaurants to check different menus and if we loved it we try to do it at home and kabobs is one of it. Using sausage is a great idea so I guess I need to let my husband know about this too. Glad I found it here.

    I think we would cook then make medallions out of them to add as the meat in a good pasta sauce. We love subbing ground beef for sausage, and it is simple to prep.

    Oh yum-I LOVE a good kabab! I keep meaning to buy a BBQ grille so I can make more kabobs… Maybe my George Foreman grill will do? We used to make them over the campfire too, that was perfection.
